MEDITERRANEAN LEMON OREGANO  CHICKEN BREASTS WITH
CUCUMBER YOGURT SAUCE        Serves 4.
2 T. olive oil
2 T. minced fresh dill
1 T. minced fresh oregano
1 tsp. salt
1/4 tsp. freshly ground pepper
Pinch crushed red pepper flakes
3 T. fresh lemon juice
2 cloves garlic, minced
2 T. water
4 boneless skinless chicken breast halves
1 medium cucumber
1 cup plain yogurt (or use sour cream for higher fat)

1. In a medium bowl, combine olive oil, dill, oregano, ½ tsp. salt, pepper, red pepper flakes, lemon juice and garlic; mix well. Remove 2 T. and set aside for sauce. Stir water into remaining marinade.

2. Trim chicken and pound to an even 1/2 inch thickness. Add chicken to marinade and refrigerate, covered, 1 to 4 hours to marinate.

3. Meanwhile, peel and seed the cucumber. Coarsely grate it and sprinkle with remaining 1/2 tsp. salt. Let stand 15 minutes. Drain cucumber and squeeze dry. Stir cucumber and reserved marinade into yogurt (or sour cream). Cover and refrigerate at least 1 hour before serving.

4. Grill or broil chicken for 4 minutes per side or until cooked through. Serve topped with Cucumber Yogurt Sauce.
