| | Meet the NOLA Chef: Making Creole Classics Diabetes & Hypertension-Friendly | | by Kaelin Bass, New Orleans Agenda Contributor | | |
NEW ORLEANS, LA (October 15, 2026) - For Chef Marilyn Doucette, food has always been about more than what’s on the plate. It’s about culture, community, and caring for the people you serve.
Her culinary journey began in the aftermath of Hurricane Katrina, a time that forever changed New Orleans. What started as an opportunity to give back to a community in need soon grew into a deep passion for cooking, serving others, and making a difference through food.
Through her dedication to helping rebuild and nourish her community after the storm, Chef Marilyn discovered that her purpose extended far beyond the kitchen. That passion for service ultimately led her to open Meals From the Heart Café on September 3, 2009.
| | |
Now, 17 years later, Chef Marilyn continues to serve the New Orleans community with the same love, passion, and purpose that inspired her journey from the beginning.
As her love for cooking grew, so did her mission. She recognized that many people in her community were living with diabetes and hypertension (high blood pressure), often feeling as though they had to give up the traditional New Orleans dishes they grew up loving.
But why should eating with your health in mind mean leaving your culture behind?
That question inspired Chef Marilyn to reimagine traditional New Orleans cuisine with a healthier twist, creating health-conscious versions of beloved Creole classics that people living with diabetes, hypertension, and other dietary restrictions could enjoy.
Her approach focuses on preserving the rich, authentic flavors of New Orleans while incorporating thoughtful ingredients and preparation methods that support more mindful eating. Because for Chef Marilyn, healthier food should never mean sacrificing the taste, traditions, or culture that make New Orleans cuisine so special.
| | |
From gumbo and shrimp and grits to crab cakes, hot sausage, and even vegan, gluten-free beignets, Meals From the Heart Café celebrates the dishes that define the city while offering alternatives for a variety of dietary needs.
For Chef Marilyn, the mission has always been simple: Preserve the culture, celebrate the flavor, and empower the community to make healthier food choices without giving up the meals they love.
What began as a commitment to giving back after one of the city’s most devastating moments has grown into a lasting legacy of food, culture, and community.
Because New Orleans food is more than a meal. It’s our history, our heritage, and a part of who we are.
And everyone deserves a seat at the table.
