Apple Pie Squares

Ingredients and supplies needed:
- Puff Pastry dough or homemade dough
- Apples
- Sugar
- Eggs
- Pastry brush
- Powdered sugar
- Sifter
- Parchment paper
- Spoon
- Canola oil spray
Instructions:
- Take out puff pastry/homemade dough and let sit to make sure it isn't frozen
- Cut dough into 4 squares
- Cut up 4 or 5 large apples
- Add 2-3 tablespoons of sugar to the apples and mix it all together
- Whisk 2 eggs together and glaze around corners of dough
- Add 1.5-2 tbsp of the apple and sugar mixture to the center of the square pierced of dough
- Fold one side and the opposite side in and fold the other two side in towards the center
- Glaze the top of the pastry
- Spray canola oil onto parchment paper and add pastries on top
- Put the pastries in oven at 375° for 20-25 minutes or until golden
- Let pastries cool and sprinkle with powdered sugar
- Enjoy!!

(Trader Joes) Cornbread muffins!

Ingredients:
- 1 egg
- ½ cup oil
- ¾ cup milk
- Trader Joes Cornbread Mix
Instructions:
- Preheat oven to 350°
- Beat egg, oil and milk in large mixing bowl
- Stir in mix until moistened (Don't over mix!)

Pour batter into greased 8x8 pan or cupcake tray/mold
- Bake until golden brown, about 35-40 minutes or until a knife inserted in the center comes out clean
- Let cool and sprinkle with powdered sugar
- Enjoy :)

I know this year has been different and definitely not what we expected, but we all have things to be thankful for and it is important to not forget about those things. Sometimes we get so caught up with everything that we have to do that we forget to have fun and live life because one day life will not be the same and all we will have left are our memories. So let's try to make as many great memories as we can. Life can seem like it is going by fast, but it really does go by fast that we don’t always remember to take a breath.
Seniors, I know this is not how you imagined your senior year and it is definitely not how I imagined mine. But stay hopeful and things will get better soon, Just know that you are loved by your family and friends. We are so close to graduating and it really helps to stay positive and look on the brighter side of things.
As for the Juniors, you still have time to have an amazing experience for the rest of high school. Hopefully you guys get to have a more normal senior year next year and can find a way to enjoy your junior year right now. Life throws unexpected obstacles at us not to hurt us, but to teach us and help us later on in life. Yesterday might have not been a great day, but we have today to be better and it is so important to be a better version of yourself than you were the previous day. Not to try to be better than anyone else, but to be better than you were yesterday.
Hope you had a good October and November, and I hope you are now having a great December!

Do your best despite covid and even then, I've found that schools and teachers are very understanding this past semester when it came to me needing help or leeway, just communicate!

Play more video games. There are people to talk to with in game voice chat, and in discord channels. It might fill the void of social interaction. Also, please join us in the virtual lounge! It's quite fun.
