FRESH LOCAL CORN IS BACK! 
Our fabulous fresh, Illinois-grown sweet corn is back! This is one of the best treats of summer. Great with your grilled fish or shrimp, you can drop in boiling water for a couple of minutes, or pull back the husk, remove the silk, put the husk back, soak in cold water for 15 minutes and throw on the grill with your fish. Or Jaime just puts it par cooked and shucked on the grill, just long enough to get some grill marks. Yummy! So good, it doesn't even need butter.

Raised in the North Sea in pens so big the fish don't know they aren't wild. Great on the grill, try it with one of our pestos added at the end of cooking, or a drizzle of Lemon Dill before serving.

European sea bass, aka branzino or loup de mer, is delicious whatever you call it. We love it simply baked with fresh herbs or some Lemon Dill Sauce, or grill it with a grill topper. Very mild and flaky, a fish the whole family will enjoy.

JAIME'S FRESH ARTICHOKE PESTO

Written up in the Tribune food pages, this is a pesto recipe Jaime devised over 20 years ago - and it's still delicious on grilled fish, or tossed with pasta. It's even good on toast points or crackers!
NEW MASK RULES
We have one senior staff member who has not had his vaccine as yet. When he is in the store, which is some mornings (varies) and on Sundays, we ask that customers wear masks, as he is in a vulnerable group.
THE REST OF THE TIME, PEOPLE WHO ARE FULLY VACCINATED MAY COME IN WITHOUT A MASK.
WE ARE TRUSTING YOU TO TELL THE TRUTH.
IF YOU'RE NOT VACCINATED, PLEASE WEAR YOUR MASK, OR ASK US TO PROVIDE ONE.
Because of an abundance of caution, staff will continue to wear masks until the threat is truly gone. Unvaccinated people pose a high likelihood of contracting one of the Covid variants which are not fully prevented by current vaccines. They are a huge risk to our one unvaccinated employee, and can be spread by people with no symptoms.

I personally love masks - I have had no Covid, no flu, not even a cold since I started wearing one. Think about it - we're walking into stores or going to events near other people all the time, breathing in what they exhale. It's no wonder we all get sick every winter! Our lives are a giant petri dish. Don't despise your masks, treasure them!

NEW CHECK OUT SYSTEM
We have just launched a new checkout system, tied into new scales, which we are not used to yet. Instead of having specials that last for two months, we will be having specials posted in the store in addition to the ones in our twice weekly blasts. Once we get used to making all the changes required for sale items, we may go back to the way we were doing things. In the meantime, daily specials will be posted on whiteboards in the store.
Our goal is to come into the 21st century with our check out system - we hope it will improve your shopping experience as well as our efficiency!

   In late June we catered a fun event for a family in Wilmette - a combined 40th and 5th birthday party, father and son. Another father and son duo, Burhop's Chef Jaime and his son Jonny, cooked up kebabs, lobster tails, sweet corn and more for a happy crowd of many ages. According to the hostess: 
"An AMAZING feast thanks to you, John and Jamie. The food was amazing and the chefs could not have been nicer. Everyone was raving and we certainly let them know who to call!  Thank you again, you have very satisfied customers." 
   Recently we did an oyster bar for a party in Hinsdale, and a lobster tail birthday party in Kenilworth. 
And in early October, we did a socially distanced wedding reception with individual lobster boil dinners.
