The maple syrup I used was quite tasty. Crown maple syrup, Madagascar vanilla infused. I don't know where Madagascar is, but this stuff tasted good! I've also used organic dark maple syrup.
Just make sure you don't use pancake syrup!
You can marinate the cod in this miso sauce for up to 24 hours. Cover it up and refrigerate!
And finally, cleaning up the baking dish after the miso cod had cooked was a pain. You might need a power washer. Or a jackhammer!
But this dish was well worth it. It was molto delizioso!

You can also use this sauce over...salmon. I know the Lady Peoples love salmon. And you got to keep the ladies happy!
Are you ready? Let's whip it. Whip it good!
INGREDIENTS
2 tablespoons white miso paste
1 tablespoon rice vinegar
1 tablespoon mirin
1 tablespoon sake
1 tablespoon maple syrup
1 pound cod filets, cut in four pieces
HERE WE GO!
Preheat oven to 400 degrees.
Mix the first 5 ingredients in a bowl and whisk whisk whisk away until the mixture is pasty.
Put your cod pieces in a baking dish.
Cover them with most of the miso sauce. Leave a little in the bowl!
Put your cod in the oven and bake for about 13 minutes, or until almost done.
Spoon the remaining miso sauce on top of the cod.
Turn the oven to broil and broil the cod pieces for 2 or 3 minutes.
KEEP YOUR EYES ON THESE GUYS! You want the tops of the cod pieces to get golden brown, BUT NOT BURNT.
When the tops are golden, pull the cod out of the oven and...
DISH IT UP!
Put it on one of them pretty plates grandma saves for Thanksgiving, serve with some rice and maybe some baked vegetables, and...
