Well October has been busy for the Sippers. We have been on the road doing barrel picks, sampling some of the barrel finishes for next year. The Podcast is in the works, equipment is here we are just working on studio and layout. Halloween is almost here and we are ready what about you?

Bourbon Apple Cider Mimosa

Bourbon and Apple Cider create the perfect (and easy) Autumn cocktail )add a few dashes of bitters and you can call it an Apple Cider Old Fashioned), but you can make the drink more festive by adding champagne and calling it a mimosa.

Speaking of festive - how cute are these pumpkin shape apple cider ice cubes?! The molds are easy to maneuver and they’re available on my Amazon Store.



It’s the perfect “Welcome to the Holidays” drink. I’m using Monks Road but you can use whatever your man is drinking.

The Legend of Iara and The Yazoo Witch


In Mississippi, there is no shortage of folklore, tall tales, legends, and ghost stories (especially at this time of year). Many of these have been told for centuries, passed down through the generations by travelers, elders, grandparents, and storytellers from all backgrounds of people in our rich cultural heritage here.


Since Halloween is upon us, the stories of ghosts, goblins, and especially wild creatures deep in the woods and rivers come back around to entertain, spook, and thrill.

Tonight's story is a double dose of watery frights: Iara and the Yazoo Witch: a pairing of Crittenden's Cut Above Bourbon with The Country Squire special release bourbon barrel aged pipe tobacco.



The Bourbon: Crittenden's Cut Above - Iara (Cryptid Series)


“From the lnky waters of the Brazilian rainforest comes the tale of lara (yaar-aa), Mother of the Waters. The legend tells us that Iara is the daughter of a shaman (“pajé”) and was known for being an excellent warrior, surpassing the skills of her two brothers. Her brothers, green with envy at their father's adiration and praise of their sister, decided to take matters into their own hands. Sneaking into her tent in the middle of the night, the brothers attempted to murder lara in her sleep. Being the great fighter she is, Iara resisted and ended up killing her brothers in self-defense. Fearing the repercussions of her actions, lara fled into the night to escape her father's wrath. The shaman found lara as she ran through the rainforest and captured her, then threw her into the river where she drowned. From the bottom of the river, the fish rose to carry Iara’s body to the surface where she was transformed by the light of the moon into an ethereal half-human, half-fish with flowing black locks and stunning green eyes. Her days as a mermaid are spent singing on the riverbanks, protecting the wildlife, and luring unsuspecting fishermen to their new life under the water as Iara's companion until their natural death.” - Crittenden's Distillery


Bobby is pairing this tonight, How could he NOT pair this with the Crittenden's Cut Above Iara from the Cryptic Series. Its Halloween and you have the Yazoo Witch Tobacco so you just have to pair it with the whiskey named after the witch. To start off the room note is nice and sweet for me. The honey notes on the palate of the whiskey intensify a sweet bready note on the tobacco. The Amburana barrel finishing on the whiskey. I almost get some allspice notes in the combination of the whiskey and tobacco. While smoking I let my boll go out to see how it would react Wildly for me I got a nice dark fruit note, I cannot place it but it showed up but goes away with the relight. Like Chris I went for a meerschaum pipe to not take the chance of picking up a previous tobacco. I call this an introspective tobacco/tobacco pairing. It makes you sit back and think of what you are getting. It is my understanding that Quinn was in on this blend. and Man he hit it out the park. the further you get into the bowl the more the flavor opens up. I am sitting here 15 minutes into my bowl and now I take a puff and a little sip and another puff and sit there and its like a freaking fine wine. The Sippers hand picked this barrel from the distiller had mad dump the bourbon and we hightailed it to the squire not knowing what the plan was but man are we over the moon with this release. We may sound partial to this blend but Man O Man this is a great blend on its own but pairing it with a Honey Amburana finished whiskey is just unreal. As the nights in Mississippi start to cool off some this was the perfect opening to pipe smoking season. If you are a Cigar smoker exclusively many you are missing out on so much. As of this day we believe that online the tobacco may be sold out, but it may still be available at the Country Squire. To finish off as I finish a bowl and should be going to bed I find myself drawn to s have another small bowl as a night cap. Cheer and Happy Halloween

“The Legend of the Yazoo Witch hails from the depths of Mississippi folklore, recounting the eerie tale of a vengeful spirit that haunts the Yazoo River and its surrounding swamplands. According to the legend, the Yazoo Witch was a woman accused of practicing dark arts and witchcraft in the early 19th century. The locals, fearing her supernatural powers, sentenced her to death by fire. In her dying moments, she placed a curse on the land, promising to return and seek revenge. Many believe that her ghostly apparition still lurks in the misty shadows, exacting vengeance on those who dare to venture too close to the Yazoo River.” - The Country Squire


“Yazoo Witch is a dark & brooding blend of matured & stoved Virginias, Turkish, Dark Fired Kentucky, with a dash of Latakia and Louisiana Perique. This year’s batch has been bourbon barrel aged in a Crittenden Distillery barrel from Kiln, Mississippi.” - The Country Squire



Flavor Notes:

Smell: In the 2oz bag the smell is like someone smoking BBQ on an open fire with sweet BBQ sauce notes along with fresh charred oak, and a little bit of earth. The tobacco is not too damp but also not dry…it's perfect.


Tasting Notes: In a meerschaum pipe, up front is the classic sweet grassy notes of the Virginia tobacco enhanced with a hint of caramel bourbon notes, followed by the toasted dark bread notes of the Burley. It's also smoky and spicy from the barrel char, Turkish and Latakia tobaccos…and of course a hint of earthy and swampy Louisiana Perique.


Strength: This is a medium strength tobacco with a fair nicotine hit.


Room note: The aromas of this tobacco are dark, smoky, and woody…like a nice campfire by the river. It’s not an aromatic tobacco. If you like medium to heavy bodied cigars, you might really enjoy the gumbo of savory and woody tobaccos on a nice cool evening.

The Start of Greatness

Founded by Jim and Gwen Reeves in August of 1970, The Country Squire has been a Deep South tradition for over 50 years. Mr. and Mrs. Reeves worked to bring the region a pipe and cigar experience like no other. A world-class tobacconist was born, majoring in the finest smoking products and accessories for the sophisticated enthusiast.


Due to the history and uniqueness of The Country Squire, the shop commonly plays host to folks from around the world. Pipe enthusiasts regularly make special plans to visit the shop, sometimes visiting from as far as Europe and Asia. These “Pipe Pilgrimages” have quickly gained popularity in the greater pipe-smoking community, and we encourage you to plan your visit soon!

Growth and Evolution

In the 1980s The Country Squire had four locations in central Mississippi, all specializing in premium tobacco products. In 1981 after the death of Jim, Mrs. Reeves faithfully ran the business for another 31 years, eventually consolidating the brand to the original location on Lakeland Drive.

The Squire developed into quite a community over the years. It was common for a customer’s tobacco order to be weighed up by a Reeves grandchild. Regulars in the shop included Mississippi personalities Jerry Clower and Willie Morris, and countless state politicians, professional athletes, authors, and the occasional actor. Legendary black labrador, Piper, kept watch over the shop while the likes of pastors, mill workers, physicians, teachers, attorneys, and professors swapped stories over their favorite pipe or cigar.

Mrs. Reeves died in 2012 after decades of service to the Jackson area and the pipe and cigar communities, leaving the shop to her daughter Kim Owen. Kim successfully began the process of transitioning The Country Squire into a modern tobacconist.

It was during this period that the Country Squire Radio Podcast was born. Available worldwide, Country Squire Radio was conceived to connect smokers abroad to the charm, sophistication, and story of this unique institution. In the following years, the CSR Podcast eventually became the #1 pipe-smoking podcast on the planet, reaching smoking enthusiasts across the globe. Due to this reach, The Country Squire now serves as “brick and mortar” tobacconist for smokers on six continents.

The Change in Ownership

In 2016 The Country Squire was sold to manager Jon David Cole.  Trained by Mrs. Reeves herself, Jon David is devoted to carrying on the legacy and tradition of this Southern institution.  Cole is assisted in running the business by a talented staff of Certified Retail Tobacconists who work to continue the tradition of hand blending high-quality tobaccos and carrying the latest and best premium tobacco products, including the world’s finest cigars.

The Path Forward

From the Dusty to the Obscure

From the collections of the Sippers

We thought it would be nice for our readers to see some of the rare bottles that we have around our collections. We will share a bottle monthly for fun.


This month we are sharing the Glen Ord 12 year Single Malt.


Much of the below information was found on the web from various sites.


The Glen Ord Distillery has a storied life dating back to the its founding in 1838. The distillery has had many owners over its lifetime and has survived 2 world wars.


In its beginning it was operated under the name of the Ord Distillery Company. It was founded in 1838 by Robert Johnstone and Donald MacLennan, who both eventually went bankrupt in 1847. In spite of bankruptcy, the distillery continued to operate illegally for a few years before they received another license under new owners, Alexander McLennan and Thomas McGregor, in 1855. Alexander MacKenzie took over running the distillery in 1877. In 1896, MacKenzie sold the distillery to James Watson & Son, whisky blenders of Dundee. the distillery closed in 1917 at the start of WWI. The distillery reopened after the war in 1919. However, the Watsons sold the company only four years later to Thomas Dewars & Sons of Perth, who amalgamated with the Distillers Company. They in turn, sold the distillery again in 1930 to Scottish Malt Distillers, a subsidiary company of Distillers Company Ltd. The distillery closed its doors for a second time in 1939 due to WWII. They did not open again until 1946. In 1985 DCL, including its subsidiary Scottish Malt Distillers, merged with Guinness. The resultant grain and malt distilling enterprises were organized under the name of United Distillers Ltd. In 1997 Guinness and Grand Metropolitan merged to form Diageo.


Today the distillery continues to produce Glen Ord whisky for Diageo, which includes the whisky in Johnnie Walker blends and Diageo’s Singleton series. The Glen Ord Bottlings are no longer produced from what we can tell.


The bottle in the picture was produced in 1994. The Glen Ord Name was discontinued in 2004

The Sippers have several of our Barrel Picks dropping that day. From our understanding is there will be 7-9 barrels dropping and a Crittenden's from the archive.

Barrel Picks Coming Soon

The Mississippi Sippers have been working hard on some new barrel picks and finishes with Matt Crittenden. There are 3 coming out very soon with our friends at Spillway Wine and Spirits This large release will include the Annual Halloween Bottle (Barrel 10/31), The Persimmon Wood (The was built as the tribute to the Crittenden Family as the Wood used was salvaged from the persimmon wood on their farm), and last but not least one we have been wanting and planning for. We have the Laphroaig Cask Finished Bourbon. These are official Laphroaig barrels used in the Quarter Cask releases.

The 1792 Full Proof pick we did almost 2 years ago has finally arrived, there is a Dettling, 2 different Cajun Cut Barrels and Spillway went into their archive and found several of the Toasted Pecan Small Batch we did and will be releasing those as well. We hear there might be a couple other barrel picks dropping so be sure to come out to Spillway and pick some up. There will also be additional bottles of one of the Cajun Cuts and another complete single barrel being released at Mendenhall Wine and Spirits.

Whiskey Wash tasting Notes:

CHARACTER - A pale yellow. In the glass, there were several legs that emerged. A light yellow, slightly pale. In the glass, there were slight legs, though minimal. Clear.

NOSE - Definitely soft fruit and pepper. There were some notes of honeydew mixed with a touch of heat. Overall, the nose was pleasant and bright. Big on lemon zest, with a bit of melon. Some oak was in there, though the fruit elements were more prominent. Dry but floral. Some citrus and pine.

PALATE -bright with melon flavors mixed with apricot.

FINISH - Not a long finish, but in the end was able to pick up some pepper.


Sippers Take:

This bottle is an affordable intro to Japanese Whiskey. We say whisky lightly. This drinks like a Sake when we sampled. it. The color is just about clear. Hardly any color. Man the nose is alcohol and not the good kind smells like rubbing alcohol. There is some pear in the palate but that is all it has going for it. If you are wanting to venture into Japanese Whisky we say skip this one unless you do like occasional Sake this this might be up your ally.

Distillery tasting Notes:

CHARACTER - Double matured ex-Bourbon barrels and American oak quarter casks.

NOSE - Smouldering peat with aromas of coconut and banana​

PALATE - Deep, complex, smoky. And a surprising gentle sweetness. 

FINISH - Really long, drying with appropriate smoke and spice.


Sippers Take:

Really what can we say this is a Laphroiag You get exactly what you are asking for. The nose is the quintessential Laphroiag Rubber smell from the peat on the nose but more subtle than you get from the 10 year. Where this differs from the traditional 10 is it has tartness in the back of the palate. The finish just sits there and just does not seam to leave. We are glad that this is bottled at 96 proof. if it would have been a lower ABV it might have come off bitter. Quarter Cask is not as easy to find but it is available. if you are into the Islay Scotches and can get one of these give it a try

Distillery tasting Notes:

NOSE - Vanilla, smoke and star anise to a licorice

PALATE - caramel, all spice, millet grain (not the same as rye or corn) and slightly sweet

FINISH - Slight burn/heat, short to medium and smoky dryness to it


Sippers Take:

Koval puts out some solid offerings. We were excited to try the Millet Whiskey to see how faired out. To be honest the initial sip was flat not much nose whit out having to force to find something. Eventually there was some sweet candied nut notes like a candied pecan. The initial taste the front palate was bitter the second sip brought out the spice notes not cinnamon like you usually get but more like a nutmeg. This is not something that we see ourselves pouring regularly but we do believe this would make a good curve ball in a blind flight.

Distillery tasting Notes:

NOSE - Refined and heady. Nutty aromas of almonds and walnut appear alongside elegant fragrances of honey and toffee. Allowed to breathe, lovely apricot notes highlight its character.

PALATE -  Fresh and lively. The dynamic attack wavers between flavors of cane sugar, tropical fruits of mango, papaya and fresh figs. Salted butter caramel shines with the perfectly integrated wood.

FINISH - Long and silky. The spicy finish quickly develops notes of fresh vanilla bean and mahogany wood. The finish ends with floral tones of evening jasmine, hyacinth and lingering incense.


Sippers Take:

Rums are fun to sip on but some are just was too sweet for our palate. This was picked up on a Sippers trip and priced around 42.00 dollars. Just off the rip the nose is fresh cut grass, reminiscent of what you get from an Agricole style rum. The is a gentle sweetness but not like a sweetened rum. We ger licorice in the back of the palate. This is a lot like a dry space cake. This coats the mouth and finally turns dry making yo want to have another sip. If you are looking to try a new rum we say grab this one. Neat or in a cocktail this is a winner.




A Visit to Seven Three Distilling

New Friends Mean New Family

The joy of bringing people and spirits together.

This wonderful hobby we all enjoy brings people together. We see it in stopping at store and meeting people to tasting events and to trips to the distilleries. It is amazing how people come together. On October 19, 2024 the Sippers traveled to see Luka and Andrew to hang out sample some barrels and pick a barrel or 2 to be the 1st barrel picks of Bywater Bourbon to Mississippi. What was special about this trip is we were able to do something you do not see often. We brought several other guest with us but we also had Matt Crittenden of Crittenden's Distillery and Phillip Mestayer of Distillerie Acadian with us. Again this was special, we had 3 master distillers and the sippers doing a barrel pick as a team. This is what we mean by family. 3 power houses of distilling on the gulf coast in a room with the sippers laughing drinking and enjoying life. We were allowed to try barrels that have never been sampled that are still in aging development. We can say with pride for the distillery are are doing it right not rushing a process to make a phenomenal product.


This distillery has a full line of spirits to fit a bar's needs. Each line is lovingly named for one of New Orleans' storied neighborhoods. Looks at what they have to offer:

They have the Bywater Traditional Bourbon, Bywater Four Grain Bourbon, Marigny Moonshine American white whiskey and Irish Channel Whiskey a blend of Irish and American whiskey and a personal favorite of ours. Then you get some fun stuff for the cocktail lovers. They have Gentilly Gin and Gentilly Barrel Reserve Gin, the St. Roch vodka, St. Roch Bayou Traditions Vodka, and the amazing St. Roch Cucumber infused vodka. Wait no rum? who are we kidding there is the Black Pearl Louisiana cane rum.


After a long day of "work" we made a trip over to Central City Barbecue to sit down for a family lunch before everyone either headed into the quarter or back home. We know it is not traditional New Orleans but this is some of the best BBQ you can have and you have to try the Banana Bread Pudding!


Here is some history on Seven Three Distilling. The distiller is a small-batch distiller of fine American spirits, founded in 2016 and proudly located in the heart of New Orleans, Louisiana. Seven Three Distilling Company was born of a lifelong love of where they live. From king cakes to Katrina, the passion and perseverance of New Orleans will always rise from her storied city blocks.
