Our Fiesta Days fun kicks off in 45 days!

In last week’s Monday Mention, we got many responses asking about what Fiesta Days was or they wanted to know more about how and why they should be involved.

Fiesta Days is 11 days of great music, food, drinks, and family fun! We have been running Fiesta Days for 74 years. The first week (at Petersen Park) starts with our Cask and Barrel Night on Thursday, followed by Music Fest weekend. Sunday is the Car Show and Beach Bash (free admission). There will be live music, games and activities for the kids, and the beach is open.We have a carnival and it runs from July 8-10. Our second week events are in Veterans Memorial Park and downtown McHenry. They include the Concert in the Park, Art and Street Fair, the Parade and more! We have many other events that go on during this time hosted by our community as well as other businesses and McHenry companies.

With this being one of longest running events in McHenry, sponsoring it is a big deal as this is an event our community looks forward to each year.

New sponsorships this year include:
  • RC Racing Game Sponsor - Logo on a 2 foot long race car body (Keep the car body after the event) – only 4 sponsorships left!
  • On-Site Courtesy Shuttle Sponsor - Two, 6–8 passenger shuttles/golf carts and drivers for attendees who need assistance crossing the park. This is an exclusive sponsor for one company.

WANTED: McHenry Golf Leauge Teammate
We had a person drop out due to a scheduling conflict, creating an open spot for someone who wants to be a league member. Your partner would be Chris Hurckes of Clarity Group Midwest. If you were thinking of joining and want to fill this spot, it would be $50.00. This league plays at 4:30 PM every week on Thursday, ending at the end of August. Contact Kelsey to sign up.

Goodwill GoodGRADS GED program summer sessions start Tuesday, May 31st by Goodwill Industries of Northern Illinois 

What: Goodwill McHenry offers the GoodGRADS GED prep program at the McHenry store in the community resource room. If you know someone that is age 17 or older and in need of assistance to obtain their GED, the GoodGRADS program maybe the right fit for them. Students at all GED levels will receive interactive classroom learning, one-on-one training, small class sizes, scholarships for GED testing, case management services and transportation assistance, if needed. 

When: Summer sessions will start on Tuesday, May 31. Class will run from 9:30am-11:30/12:00pm Monday-Thursday.

YIELD: 4 SERVINGS - PER SERVING: 1 LEAN, 3 GREEN, 2 CONDIMENTS - TOTAL TIME: 30 MINUTES

Ingredients
  • 1 lb. 90% lean ground beef
  • 2 cups sliced mushrooms
  • ½ tsp salt, divided
  • ½ tsp ground black pepper, divided
  • 4 oz. reduced-fat shredded cheddar cheese
  • ¼ cup white vinegar
  • ¼ cup water
  • 1 cup thinly sliced cucumber
  • 1 beefsteak tomato, sliced into 4, (¼-inch thick rounds)
  • 8 large lettuce leaves
  • 4 tsp Dijon mustard (optional)

Directions
  1. Pre-heat oven to 400⁰F.
  2. Line a sheet pan with parchment paper or foil. Spray with non-stick spray.
  3. Divide beef into 4, (4-ounce) portions and shape each portion into ¼-inch thick patties. Season with a ¼ teaspoon of salt and pepper. Place patties on the sheet pan and set aside.
  4. Spread mushrooms in a separate section from patties. Spray top of mushrooms with non-stick spray and season with ¼ teaspoon of salt and pepper.
  5. Place the sheet pan in the oven.
  6. After 5 minutes of cooking, remove mushrooms and set aside. Continue to cook patties for about 3 minutes, and then turn the oven up to broil.
  7. Portion 1 ounce of cheese over each patty and return it to the oven to melt.
  8. To make pickles, bring vinegar, water, and ¼ teaspoon of salt to a boil on the stovetop or in the microwave. Pour mixture over cucumbers and set aside.
  9. For one serving, spread 1 teaspoon of mustard on 1 leaf of lettuce and top with 1 burger patty, ¼ of the mushrooms, 1 slice of tomato, 4 slices of pickles, and another leaf of lettuce.

Note: For medium-rare, cook the beef to an internal temperature of 125°F; for medium to 135°F; for medium-well to 145°F; for well-done to 160°F. Nutrition Per Serving: 310 calories, 33g protein, 8g carbohydrate, 17g fat.
