Chicken and Butternut Squash Chili
by Suzy Johnson, adapted from Cooking Light and The Whole World Loves Chicken Soup
This non-tomato based chili is a dish that is as beautiful as it is delicious.  The photo at right is from Cooking Light and includes non-paleo white beans, so I omitted those and added kale and a yellow bell pepper instead.  It looks like a red, orange, yellow, green and white rainbow when done.  My version also includes homemade organic chicken broth and shredded chicken, but if you are in a hurry, you can sacrifice some benefits and use boxed organic broth and an organic rotisserie chicken from Wholefoods.  Make it my way, and you will have additional chicken and broth for another use like chicken salad or chicken soup for the freezer.  Don't skip the cilantro-lime-garlic topping.  It makes it extra special!  And if you have some guests who prefer less heat, then don't add the jalapeno, but offer it as a topping on the side.  Enjoy!
