I am so grateful for the many acts of kindness I see almost every day — it feels so good to wrap up in that kind of positive energy and helps keep us balanced as we wrestle with the negative things that always find a way to creep in to our lives. In more extreme times like we're all experiencing now with the pandemic, caring about each other is more important than ever. The empathy for our fellow human beings that I'm seeing as I go about enjoying the Upper East Side of Texas is heartwarming. From sending gifts and cards to those in a nursing home, to providing food for children in need, to the simple act of offering someone a chair, there's no end to the things we can do for each other to keep the good vibes going. — P.A. FEATURE
On October 12, 1901, the Scientific American magazine announced the news of construction of an experimental aircraft built by Burrell Cannon of Pittsburg, Texas. By the next August 1902, the aircraft called Ezekiel Airship allegedly did fly 160 feet at a height of about 10 to 12 feet off the ground. This predated the Wright Brothers’ history-making flight a year later, although authorities say Cannon’s craft was “uncontrolled flight” and might not have happened at all due to lack of verification. It's now on display at the Northeast Texas Rural Heritage Museum in Pittsburg.

FOOD & DRINKS
In Jessica Dupuy’s book, United Tastes of Texas: Authentic Recipes from All Corners of the Lone Star State, she has this to say about East Texas:

"Texas’ roots — as part of the Deep South — begin in East Texas. While French exploration occurred in the late 1600s, settlement didn’t really take place until the 1800s, and the food in East Texas shows influences of the French-Cajun areas of nearby Louisiana, while signature Southern flavors predominate."

The book is available on amazon.com. Follow the headline link to her recipe for East Texas apple pie.
