  • Please, please remember to return your box (we are starting to run short!) We can also reuse the silver insulating bubble wrap in MES boxes as well as egg cartons and clear plastic & green pulp pint/quart boxes. Thanks!

  • It's the 9th week of Summer Vegetable Shares.

  • EOW Vegetable members @ LEUCC & SGFM pick up boxes this week.

  • This week MES boxes = Dianne Dr & Richland Center. You will find chicken (2=full shares, 1=half shares) and eggs (full= 2 doz & half shares = 1 doz. The chickens are rebounding from the really hot weather a few weeks back, and we are getting more eggs but still not up to previous numbers. So we can fill this week's MES boxes but don't have enough to catch up last week's MES boxes yet. If you also have a vegetable share - make sure you take both boxes.
  • Next week (#1 for August) MES boxes will be for SGFM.

Napa Noodle Egg Rolls
from Asparagus to Zucchini
3 1/2 oz bean thread noodles
1/2 lb lean ground pork
1 c finely chopped onions
2 c finely shredded napa (Chinese) cabbage
1 egg beaten
1 TBL sesame oil
salt & pepper to taste
1 lb egg roll wrappers
2 egg whites, beaten (to seal wrappers; I use water)
3-4 c vegetable oil
Dipping Sauce

Soak noodles in hot water 15 minutes. Drain well; chop. Mix with pork, onions, cabbage, egg, sesame oil, salt, and pepper. Place egg roll wrapper on work surface with one corner pointing toward you. Place 2 heaping tablespoons filling near bottom corner, shaping mixture to look like a cigar. Roll wrapper (lower end) over meat to middle of wrapper. Brush edges with egg white and roll up completely.

Repeat with remaining filling and wrappers. Heat oil to 375 degrees. Deep-fry egg rolls in small batches until light brown, about 5 minutes. Drain on paper towels. Serve with dipping sauce.

Makes 20-25 egg rolls.
