Financial Difficulties and Impulsive Spending in Bipolar Disorder: A Psychological Understanding
Dr. Thomas Richardson is a Clinical Psychologist working in Community Adult Mental Health Services for Solent NHS Trust in Portsmouth, UK. He is also a visiting lecturer at the School of Psychology, University of Southampton and has published a number of articles about the psychological understanding and treatment of Bipolar Disorder and the impact of financial difficulties on mental health problems. He is also a former service user with lived experience of Bipolar Disorder.

This baked dish is a family crowd pleaser for breakfast, brunch or dinner!
6 servings
1 teaspoon butter
1/2 cup uncooked quinoa
8 eggs
1- 1/4 cup nonfat milk
1 tablespoon garlic, chopped 1 teaspoon basil, chopped
1/2 teaspoon salt & pepper
2 cups packed baby spinach-chopped
1 cup finely shredded parmesan cheese
Optional- saute diced sausage links and vegetables of choice and add to mixture for added nutrition and flavor!
Preheat oven to 350°F. Grease 8 x 8 glass or metal baking dish.
In a large bowl, whisk together eggs, milk, garlic, basil ,salt, pepper, and quinoa. Stir in spinach and any additional meat/vegetables. Pour mixture into prepared dish and cover tightly with foil. Gently shake the dish to ensure that quinoa settles to the bottom.
Bake until just set, about 45 minutes. Remove foil and top with parmesan. Bake uncovered until golden brown, approximately 10-15 minutes.
Briefly cool and serve.
