March is in like a lion out like a lamb! At least that is what some people say. Weather fluctuates so quickly here in NC that it is best just to go with the flow. NC fisherman are keen to this and don't set their seasonal clocks too strictly. One sign that Spring is in the air despite the weather is American Shad.
Shad are found up and down the inland rivers of NC. Historically Shad has been eaten to help early pioneers and settlers get their protien during the cold months of winter. Although Shad have small pin bones similiar to Salmon they just need to be prepared in a way to make this delicious fish perfect. Frying these fish makes the bones more easily
digestible. Smoking these fish also brings out some of the best flavor that you can get in seafood. If you want a real treat try Shad Roe. This rich delicious delicasy is sought after by enthusiasts every year.
Offshore NC it is still tropical with the warm waters of Gulf Stream eddies warming up the Vermillion Snapper, Black Sea Bass, and Triggerfish. All of these fish comprise a tasty NC bottomfish trio.
If you want a shrimp product equally as rich as Shad, relatively unknown, and among the best tasting of all shrimp try our Jumbo Royal Reds. Scientists conducting a trawl survey in near 2000 feet of depth picked up a load of these shrimp for the first time and since then Shrimpers on the US Southeast coast have been deep trawling for these "Reds".
The superior rich taste and tender texture will have you wondering why you haven't been chowing on these every day!
Mahi Mahi is one of the worlds most popular fish. Unfortunately in NC we only get them for about a month or so in June
so luckily we have suppliers in warmer water . This weekend we will have some more superb quality filet portions. Mahi is a favorite for fish tacos with its mild taste a pleasing texture. Try some!
