Morning at Smith Mountain Lake
Greetings!

The picture above is the last I will be sending from beautiful Smith Mountain Lake in Virginia for the time being. We've had a marvelous five weeks of vacation, unlike any we've ever taken, but definitely not the last. As I stated recently my father was a general merchant in the little town of Knightdale, NC which is now connected to Raleigh, and never took vacations until he retired and I was gone from home. I was always taught to never be idle because that is the devil's workshop, so I worked from the time that I bagged groceries at our store with the bag on the floor so I could fill the bag with groceries. At age ten, I bought my first lawn mower to make enough money to go to the World's Fair in New York, but since my dad didn't take vacations and had no interest in ever going back to New York, I didn't make that trip. At this time, I learned how dangerous it is to ever break a one-hundred dollar bill and how quickly it is gone afterwards. After college, I went into the restaurant business working for two hard-working men who took their vacations all over the world, but never suggested I needed to take one because I was so young with unlimited energy and worked without complaint. When I opened my own restaurants, I never felt like taking more than a few days off so taking a five-week vacation has always been unimaginable. Aghhh. This has been great, and I look forward to returning home to focus on my work...maybe.

Our salmon is cut from whole fish into huge fillets which are the sides of the fish without bones. We cut these sides into collars, center cut narrow strips, center-cut wide cuts, and tails. 
Collars are the fattiest of all the cuts and are best for sushi mi and sushi. Tails are the least fatty and are best for medium, medium well, and well-done salmon. Center-cut strips and wide cuts are best for grilling, broiling and sauteing.
Please specify which cuts you prefer.
