Recipe of the Month
 Orange and Blueberry
Raw Cheesecake
Ingredients
Crust:
2 cups raw nuts
1 cup dates or raisins
pinch of salt
Orange cheesecake:
3 cups cashews
3/4 cup fresh orange juice
1/2 cup agave/maple syrup/raw honey
1/2 cup melted coconut oil
juice of one lemon
zest of all the oranges you juiced
pinch of salt
Blueberry layer:
2 cups organic blueberries (I used frozen)
1/4 cup of the orange cheesecake mixture
Preparation
To make the crust: process the nuts and dates/raisins in your food processor until the nuts have become crumbs and the mixture sticks together when you press it. Press into the bottom of a springform pan and put in the fridge.
To make the orange cheesecake: blend all ingredients (except orange zest) in your high speed blender until very smooth, then add in the orange zest with a spoon. Reserve 1/4 cup of this mixture for the blueberry topping - pour the rest onto your crust and put in the freezer.
To make the blueberry layer: blend the blueberries and the 1/4 cup of cheesecake mixture in your food processor or blender until creamy but still with small pieces of blueberry for texture. spread this over your cheesecake and keep in the freezer or fridge overnight. if you can wait a day - this is best after 2 days (and not frozen, of course) enjoy with sliced oranges and blueberries!

As the Circle of Life states, "There is a tendency to want to hurry from autumn to spring, to avoid the long dark days that winter brings. Many people do not like constant days bereft of light and months filled with colder temperatures. They struggle with the bleakness of land and the emptiness of trees. Their eyes and hearts seek color. Their spirits tire of tasting the endless gray skies. There is great rejoicing in the thought that light and warmth will soon be filling more and more of each new day.
"But winter darkness has a positive side to it. As we gather to celebrate the first turn from winter to spring, we are invited to recognize and honor the beauty in the often unwanted season of winter. Let us invite our hearts to be glad for the courage winter proclaims. Let us be grateful for the wisdom winter brings in teaching us about the need for withdrawal as an essential part of renewal. Let us also encourage our spirits as Earth prepares to come forth from this time of withdrawal into a season filled with light.
"The winter solstice celebrates the return of hope to our land as our planet experiences the first slow turn toward greater daylight. Soon we will welcome the return of the sun and the coming of springtime. As we do so, let us remember and embrace the positive, enriching aspects of winter's darkness. Pause now to sit in silence in the darkness of this space. Let this space be a safe enclosure of creative gestation for you."

Free Community Class starting in January on Saturdays at Noon with Featured Teacher Sylvia Rubi

Sylvia is a P.S. Yoga success story. A runner who has completed four Chicago Marathons, she turned to practicing yoga in 2010 after reading of the many health benefits yoga provides runners in training. She enjoyed yoga so much that she joined the P.S. Yoga Work Study program so that she could take unlimited classes in exchange for working at the front desk. Now she has completed her Hatha Yoga RYT 200-hour teacher training under Suddha Weixler and will teach primarily Hatha classes at P.S. Yoga. She hopes to bring the gifts of wellness and mindfulness to her students, much the way teachers at P.S. Yoga have helped her over the years. "My passion to teach grew from the great experiences I've had and the many health benefits I've gained by practicing at P.S. Yoga," Sylvia said. "We live in a fast-paced world and as a yoga teacher, I want to help my students come to their mats and connect their breath to movement and mind through proper practice and alignment."
