Pork Rib Roast.  Featured in photo to right. Similar to a beef rib rack, the pork rib roast is often the holiday centerpiece. Average weight is between 6 and 10 lbs.

Pork Boneless Loin Roast.  Photo below right. Similar to the Strip Loin roast in beef, the pork loin roast is tender and flavorful. It averages 2.5 to 4 lbs each and we suggest approximately 8 oz per guest. $12 per lb.

Pork Tenderloin. . At just about one pound each, a pork tenderloin can be a quick, easy, and delicious meal for couples or small dinner parties. 1 tenderloin generally serves 2 guests.

Pork Coppa Roast.  Below, on the bottom left is the coppa cut into steaks. It is the center cut out of the pork shoulder, part of the boston butt roast. It is essentially an extension of the pork chop up into the neck. This is the cut we use for capicola and coppa crudo. It is well marbled and very flavorful. This is an excellent braising cut for New Years. If you have a sous vide machine, please consider cooking in sous vide, slicing into steaks, and searing off in a hot skillet and glazing with demi-glace. Each roast is approx 5#.

Thick cut and meaty, these spareribs are cured in our BBQ cure then smoked slowly to a tender finish. Simply reheat in the oven or on the grill, brush with sauce, and enjoy.

Smoked Lamb Ribs

Unlike our pork ribs, we took these a different flavor profile. The sticky rub we created is based on hoisin, soy sauce, and chinese 5 spice. The ribs spent a week soaking in the flavors before being smoked to a tender finish.

New Years Stuffed Pork Chop

Thick cut boneless pork chops stuffed with a homemade dressing of cornbread, chorizo, and jalapeno.

Simply place in the oven on a sheet tray and roast until and internal temperature of 150 to 155 is reached. Pull from the oven and let rest 10 minutes before carving.
