Our charter calls for our Association to to provide scholarship opportunities for those in our industry.  To that end we are pleased to provide financial assistance to worthy students,

COMMUNITY EVENTS
    
The New York State Association of Manufacturing Retail Bakers is often called upon by its neighbors to join in community affairs. Our most recent event helped to raise over a thousand dollars for a young girl struggling with cancer.

Spotlight on New York State Members


In this new feature of our Newsletter, today we introduce you to Werner Simon, Master Baker,    
Corporate Chef and Consultant .
 
 
MY STORY   
     
  
   
Werner began his training at the age of 14, where he learned the basic foundations of the bakery artisan trade. Throughout his teenage years Werner, honed and refined his craft in various prominent bakeries throughout Germany, a journey necessary to earn his Masters degree in Baking at the time.
 
Werner moved to New York City in 1962, to advance his English skills, and with hopes of earning enough money to return to Germany and open his own bakery. He soon realized that his skill, and trade, could be applied in New York. Werner worked numerous jobs in many bakeries, learning the New York and American style, and eventually took ownership of a very successful local bakery in Brentwood, NY. After achieving the retail bakery success in one location, he opened a second location in and later became partner, with his now wife, Cindy, to open another, simultaneously operating bakery in Smithtown, New York. Over the next several years, Werner and Cindy opened three additional stores, the last "Manhattan Sweets Boutique Bakery" which is still owned and operated by Werner and Cindy in Islip, NY.
 
Werner also started and co owned and operated a bakery mix company on Long Island for several years and later sold the company and moved on as President, VP and consultant for about 22 years with several mix manufacturing plants.
 
 
Personally, Werner has been married for over thirty-six years, and has four children, and five grandchildren. He currently resides in West Islip, NY, and enjoys boating, skiing, travel, and of course - baking!

BLUEBERRY-CHOCOLATE MOUSSE CUPS
 
   
 

 
 
   
 
BLUEBERRY-CHOCOLATE MOUSSE CUPS
                                  
                                    1 cup half-and-half, divided
                             1-1/4 teaspoons unflavored gelatin
                                 1/2 cup semi-sweet chocolate chips
   6 (2-1/2-inch) round chocolate wafers
                                   1 cup fresh or dried blueberries
 
In a large microwaveable bowl, place 1/3-cup half-and-half. Sprinkle gelatin over and stir to mix; set aside to allow gelatin to soften for 5 minutes; microwave on high until bubbles appear, 30 to 60 seconds. Add chocolate chips and stir until smooth then stir in remaining half-and-half. Cover and refrigerate until the mixture starts to set, 20 to 30 minutes. Meanwhile, line 6 muffin cups with paper or silicone cupcake liners; place a chocolate wafer in each, crush to fit; set aside. With an electric mixer, beat the chocolate mixture until smooth and fluffy. Fold blueberries into mousse; spoon into cupcake papers; cover loosely and chill until firm, about 2 hours. (Recipe can easily be doubled.)
