    IT WAS WORTH THE WAIT

It took two years of planning, meetings, contacting vendors, arranging educational programs, hiring the best instructors, choosing judges, creating marketing strategies, and the list of tasks goes on and on. BUT! It was worth the work and wait as thousands streamed into the Convention Center to join us at the

BEFORE THE EXPO OPENS

The morning started with vendors preparing their booths and getting ready for two busy and exciting days of renewing acquaintances and meeting new customers.

Guests moved quickly through the lines as they were processed efficiently by a friendly staff at Check In.

EDUCATION PROGRAMS

While some were checking in, others were sharpening their skills by participating in a wide variety of professionally developed Hands on Classes and Educational Sessions as shown below.



 
Who does not love to experience the thrill of working with  Fondant  first thing in the morning? The students were treated to a hands on Beginning Fondant followed by Intermediate Fondant class by the staff of Stacked,     in Ashburn Virginia.
 

 






Others participants  concentrated  on the more than twenty Business Sessions offered regarding many of the most important aspects of running a successful  shop.

VENDORS

Attendees were treated to a wide variety of Vendors who were willing to share their product knowledge and expertise. They included a great variety of specialties from manufacturing, packaging, prepared foods, business support companies, insurance carriers, labeling distributors, and much more.  Lets just take a quick look at some of the participants.

DEMONSTRATIONS
______________________________________________________________________

These professional demonstrations either took place in the Demo Theater or on the EXPO floor. Below is a wonderful, fun step by step instruction by Satin Ice, on how to create an interesting 3D character cake.


OK.  Let's start with some cake and a big blob of icing.
  A little extension on the front might be good.

Add some gum paste ears made earlier in the day.  Looks like the beginnings of perhaps a rabbit?
Drop in a tongue.  Clearly not a rabbit. How to give it some life? Let's do a little air brushing. Looking pretty good. Highlight the eyes and ears. Almost there. Color those ears and show me that healthy pink tongue. Add a bone and now it is your turn to go back to your shop and do the same. Good luck with that! 
Amazingly, it only took about 20 minutes from start to finish.

Several competitions were held during our two d ay event. I have Good News, Bad News. The Bad News is that this newsletter issue will focus on only one of them. The Good News is that you now have something to look forward to in our next,issue.
 
All of the entrants in Flavor Right's Extravaganza contest were simply amazing, and the panel of judges certainly had a challenge in choosing the winners.  Featured below are a few of the entries.
 
   
 
We begin with Student/Beginner and finish with Professional.
 
 
 
 

The Judges chose winners in several categories  and one contestant was awarded Best in Show.  At this point

Blueberry Mascarpone Pie 


 
            1 9-inch pie crust
            1 cup mascarpone cheese
            5 tablespoons lemon curd
            2 cups fresh blueberries
 
Make pie crust for 9-inch pie or tart. Preheat oven to 375°F. Press pie crust into 9-inch tart pan with removable bottom. With tines of a fork, pierce bottom and sides. Bake until lightly browned, about 10 minutes; refrigerate until cool, about 10 minutes. In small bowl, stir together cheese and 3 tablespoons of the lemon curd until smooth. (If mixture is too thick to spread, add a small amount of milk.) Spread mixture in bottom of cooled tart shell. In medium-size bowl, gently stir blueberries and remaining 2 tablespoons lemon curd until thoroughly combined. Spoon blueberries evenly over mascarpone layer. Cover and chill 2 hours.
