NEW YORK STATE BAKERS VISIT THE
INTER-COUNTY BAKERY BUYING SHOW

On October 2nd, we had the privilege of attending the show of one of our long time supporters and suppliers to our industry. We spent time exploring the new product lines and chatting with current and new vendors.
Thanks for inviting us. As in the past, it was a good experience.

He is a Former President and Now He is Running Again!
Paul was President of New York State Association of Manufacturing Retail Bakers, and no he is not running for President of the United States (at least not this year), but he is looking to again give his many talents and strong ethical leadership as a County Legislator.
The families, business, and taxpayers of Nassau County will be very fortunate to have Paul represent their interests.

Focus on Education
One of our missions as an association is to provide a platform for teaching new entrants to the baking profession. We recently had the opportunity to share our experiences with students of Culinary Institute of New York at Monroe College.
Below is a letter we received from Chef Gerald Molloy CEPC AAC Lead Pastry Instructor and just one of the numerous "Thank Yous" from the students who participated.

National Bakery Day
On National Bakery Day, biz group says shop local
The Nassau Council of Chambers of Commerce is taking Thursday, National Bakery Day, as an opportunity to promote the shop-local concept.
Gathering at Riesterer's Bakery in Hempstead, chamber members stressed the early hours that go into preparing popular favorites, from chocolate chip cookies to cheesecakes to onion rolls and other delectables.
And given that independent bakers typically live and work on Long Island, the profits stay in the region, rather than to an out-of-state corporate headquarters of a big-box store.

BLUEBERRY STEAMED PUDDING
Frozen blueberries make these seasonal treats the bakers' choice for ease, availability, and customer appeal for delicious holiday goodies.
5 tablespoons butter, divided
1 tablespoon plus 3/4 cup sugar, divided
4 cups fresh or frozen (unthawed) blueberries, divided
1/2 cup flour
1/2 cup vanilla yogurt
1 teaspoon vanilla extract
6 eggs
Using 1 tablespoon of the butter, grease a 1-1/2 quart microwaveable round baking dish or bowl and sprinkle with the 1 tablespoon sugar; set aside. In a large microwaveable dish, toss 2 cups blueberries and the remaining 3/4 cup sugar. Cover loosely with clear plastic wrap and microwave on HIGH (100% POWER) until blueberries are tender, about 4 minutes. In the container of a food processor, combine cooked blueberries, flour, yogurt, vanilla and the remaining 4 tablespoons butter; process until smooth. Add eggs; pulse to blend. Pour mixture into the reserved buttered dish; stir in remaining 2 cuts blueberries. Cover dish loosely with plastic wrap; microwave on HIGH until set in the center, 12 to 14 minutes. Prick plastic wrap to release steam; cover dish with a large plate and let stand 20 to 30 minutes. Uncover and remove plastic wrap; invert pudding onto a serving plate. Serve warm with additional vanilla yogurt, if desired.
Yield: 8 servings
