Heart Healthy Recipes

What says Valentine's Day more than heart-healthy strawberries? But they don't have to be dipped in chocolate! Try them in this easy salad instead.

Strawberry Spinach Salad with Chicken

2 tablespoons raspberry vinegar

2 teaspoons pure maple syrup

1 teaspoon extra-virgin olive oil

1 medium kiwifruit, peeled

4 cups baby spinach leaves, long stems removed

5 ounces cooked chicken breast, shredded

1-1/2 cups sliced fresh strawberries

1) Make the dressing: In a small bowl, whisk together the vinegar, maple syrup, and olive oil. Set aside.

2) Slice the kiwifruit into thick rounds and then cut each slice into quarters. Set aside.

3) In a large bowl, place the spinach leaves. Drizzle with half of the dressing and toss well. Divide the spinach between two serving plates or pasta bowls.

4) Top each plate with chicken, kiwifruit, and strawberries. Drizzle the remaining dressing on top. Serve immediately.
