Greetings from Craig Reese

I don’t know if you heard, but the world ended for much of Texas last week when we got the kind of ice and snow so many of you deal with every winter. Many of the schools in the North Texas area around Dallas were shut down for four days. In order to protect our employees, the firm closed its offices for two days, but rest assured we continued to work from home during that time so your cases were being taken care of even as we attempted to thaw out. Fortunately, most of us did not suffer any power outages or broken pipes. I for one, am really glad it is over. We are expected to have temperatures this weekend in the middle to upper 70’s and possible pushing 80 on Friday. One thing about Texas weather, if you don’t like it, just wait a day and it will change. While we don’t like cold weather here, we remain very appreciative of your confidence in our work and the files you continue to send us. Please let us know if there is anything we can ever do to improve the quality of the service we provide. Stay warm and safe.

Valentine Chocolate Covered Cherries

Ingredients

  • 2-1/2 cups confectioners' sugar
  • 1/4 cup butter, softened
  • 1 tablespoon 2% milk
  • 1/2 teaspoon almond extract
  • 2 jars (8 ounces each) maraschino cherries with stems, well drained
  • 2 cups semisweet chocolate chips
  • 2 tablespoons shortening

Step 1: In a small bowl, combine confectioners' sugar, butter, milk and extract. Knead until smooth and pliable. Shape into 1-in. balls and flatten each into a 2-in. circle.

Step 2: Wrap 1 circle around each cherry and lightly roll in hands. Place with stems up on a waxed paper-lined baking sheet. Cover loosely and refrigerate 4 hours or overnight.

Step 3: In a microwave, melt chocolate and shortening; stir until smooth. Holding on to the stems, dip cherries into chocolate; allow excess to drip off. Place on waxed paper until set. Store in a covered container. Refrigerate 1-2 weeks before serving.
