Adopt a Family
Once again, the Lynnwood Convention Center teamed up with Edmonds School District to adopt a family for the holidays this year. The holiday season can be challenging when you're going through difficult times, but our staff strives to bring cheer whenever possible. Our adopted family received clothing, toys and more.
 Locally Sourced
Here at Lynnwood Convention Center we are aware that locally sourced spirits are in ever-increasing demand. By serving locally crafted wines and spirits, we are striving to reflect our commitment to offering our guests the finest Northwest products. In addition to supporting our local businesses and increased quality, we want our guests to be immersed in the Northwest experience. Washington is the second largest producer of premium wine grapes in the US and international recognition of their quality continues to grow. Feeding Our Community
We believe in the combined efforts of limiting wasted resources and caring for our community. Because of this, the Lynnwood Convention Center donates more than 9,000 pounds of food per year (based on 2016's average), to the Lynnwood Food bank. The food bank has never been closed because of donations from properties like the Lynnwood Convention Center.

Apricot-Cranberry Stuffing
What's more festive than holiday stuffing? This quarter, Chef Michael shares his recipe for Apricot-Cranberry Stuffing. This hearty, flavorful dish will keep you warm when it's cold outside!

6-8 oz butter
1/2 lb. dried apricots, thinly sliced
¼ cup dried cranberries
1 onion, ¼ diced
1 medium red bell pepper, finely diced
1 clove garlic, minced
1 tbs. fresh ginger minced
2 medium orange, juiced
1 crusty baguette or quarter sheet of focaccia
1 tbs. fresh thyme, finely chopped (dry can be substituted if necessary)
1/2 tsp ground coriander
1/2 tsp ground allspice
1/2t tsp ground cinnamon
12 oz heavy cream (chicken or vegetable broth may be substituted for  a lower fat option)
2 eggs, beaten
4 oz grated asiago cheese (parmesan cheese can be used instead)
1 tbs. kosher salt
1 tsp white pepper
 
Cut the bread into half inch cubes and dry in the oven for 5-7 minutes.
Melt the butter in a medium sauce pot. Add the onions, garlic, ginger, red peppers, and dried spices and sweat over medium heat for 5-7 minutes. Stir in the apricots, cranberries and thyme.
Add the bread to the vegetable and fruit mixture and stir so that the bread cubes are coated.  Add the cream and orange juice and gently cook all of the ingredients together, stirring frequently until the liquid is absorbed and the bread has softened. It might be necessary to use some additional liquid. Cool slightly.
Add the eggs, cheese, salt and pepper.
Place mixture in a well buttered or sprayed medium sized casserole dish, taking care to press the mixture in evenly.
Cover with a lid or foil and bake for 40-45 minutes in a preheated 325 degree oven, removing the lid or foil to brown the top of the stuffing for the last 10 minutes.

Tony Garcia fully demonstrates the Lynnwood Convention Center's core values of awareness, character, and adaptability. In Quarter Three, Tony took this to another level by vertically expanding his role and job duties by being proactive in addressing facility repair and maintenance issues, helping perform audiovisual troubleshooting, and assisting other teams to ensure successful events. Tony has an impressive sense of responsibility and takes tremendous pride in his role, his team and the venue. His thoughtfulness, work ethic and professionalism are constantly on display, and he has been recognized numerous times by peers and leadership.
