Happy New Year from Opus One Restaurant!
Scottish Field Review awards Opus One four stars!
January in Opus One kicked off with a fabulous two page review in the prestigious Scottish Field magazine.
Reviewer Cate Devine gave Opus One a very impressive four star rating and some of her comments were as follows:
" Cured loin of Perthshire roe deer, served in seven rose-centred slices and with little pastry parcels of shoulder confit, was achingly delicious and certainly worth the attention of the Michelin inspectors."
"We left reluctantly, but seared by the impression left by Denesle. Might he open an Opus Two? And could it be in Glasgow please?"

Why Local Produce?
Fresh, local produce in Scotland is becoming more and more popular. As people discover the benefits of buying fresh, local produce, more farmer's markets are appearing and local suppliers are opening their doors wider to the public. The customers want to know where their food comes from and to support local suppliers, especially in more rural areas. Tasteless, out of season food does not have as much flavour as food that is fresh and in season.
Reasons to eat fresh local food are: Fresher, Tastier and Healthier.
The variety, freshness and superior taste of fresh, local produce makes it the obvious food choice for today either in the home or when eating out. One final important note to consider - Michelin food inspectors and Michelin standard chefs value above all else, fresh, local produce that not only looks impressive but tastes good, and is a major ingredient in what sets them apart. This is the reason why fresh, local produce is the best of the best.
The term 'Local Food' comes from the re-assurance that local food is 'good home produce', has not adversely harmed the environment and gives an assurance of where it has come from and how it is produced, and it is also very nutritious.
Here at Opus One, we use the freshest, tastiest produce from suppliers around Scotland, whereas some fruit and veg growers deliberately grow their produce to look more appealing on supermarket shelves.
Our meat suppliers own livestock is solely reared outdoors in good conditions, eating natural, nutritious food which produces tastier and more tender meat then animals forced to live in barns, eating inorganic feeds which are pumped full of growth hormones. Also our fish supplier uses wild fish which has more flavour than farmed fish, again this is largely due to diet and fresher water.
The surge in demand for Scottish produce that we've witnessed in recent years shows that many people are already aware of the outstanding quality of fresh, seasonal food on their doorsteps. Scotland is home to some of the finest produce in the world, and we should be extremely proud of that reputation.
All I have to say is -
"Eat Fresh, Eat Seasonal!"
