Summer is officially here and the humidity seems to have arrived with it. Around early July is the time when we start seeing signs more humid days and, up until just a few days ago, mornings were still crisp and cool. As of late, it seems to be a bit hotter and stickier throughout the day. The high wispy clouds and humidity have arrived here and that usually means monsoon season is near for Arizona. Rocky Point usually doesn't get rain such as the storms bring up North. Here, it's just hot. And humid. But, hey, it's still Rocky Point so you won't hear many folks complaining. 

June brought many fun events and a ton of people to town. Circus Mexicus was the highlight and, as always, the event sold out just about every condo on Sandy Beach. Fun was had by all once again and after 20 years of the event in Rocky Point, it continues to get bigger and better every year. Roger and crew are going strong and we all look forward to his next show in town. If you have never been to Rocky Point during Circus Mexicus, add it to you list of things you have to do. You will be glad that you did. 

Today marks my 9 year anniversary with the Sonoran Resorts. It's hard to believe that I have been with this company so long, but it has been a wonderful experience and I hope to stick around for a long time to come. Much has changed in nine years as well, one big change being the Real Estate market. When I started with the Sonoran Resorts on July 1, 2010, we were almost at the very bottom of the recession and things were hard for many people here. The market was depressed and sales were slow. My how time can change things! Prices have risen, sales are brisk, and this town is hopping. Rocky Point is popular again! Definitely a change for the better and everyone from local residents to tourists reap the benefit of the good economy and renewed popularity of the area. It definitely makes me happy to see the movement.

Las Vegas Night for Charity 2019 This Saturday!!! 

 

The time is very near so if you have not yet made plans to visit Rocky Point or if you have not purchased tickets for our fantastic annual charity event, there's no time to waste. You can buy tickets online before the event, or they are available at the door. 

Since we have promoted this event for the past couple months, you probably already know what to expect: a fantastic fun night of blackjack, roulette, prize wheel, and poker all included in your ticket price. To make things even better Cielito Lindo Fine Mexican Cuisine will host a fabulous buffet dinner. There will be a cash bar so that you can enjoy your favorite libations if so desired, and there are about 150 wonderful prizes which will be raffled and auctioned off throughout the night. You will receive one entry into the drawings with your ticket but you're more than welcome to purchase additional raffle tickets if you so choose. How could this possibly get any better? How about live music, you say. Well, OK, we'll have live music too. All this and more for your ticket price of $50 per person. Surely, you won't want to miss the fun. 

This event has always been for the benefit of some of the most honorable and deserving causes and charities in Rocky Point and, just in case I hadn't said it enough already, every penny from the event goes to the causes. Not every penny after expenses, mind you. The expenses, food, location, music, gaming tables, volunteers, etc, etc. are provided by the Sonoran Resorts and Cielito Lindo Restaurant so that the actual full amount from ticket sales and raffle ticket sales goes directly toward charity. 

One thing that may not have gotten enough attention in past newsletters are the actual donations from the event over the years. In the seven years of the event, we have raised and donated more than $750,000 pesos to local charitable causes. Here's a list of some of the things that you have helped us do in past years:

Once again, we won't know the totals which go to each individual cause until after the event, but I'll be sure to fill you in next month. Please try to be here on Saturday, July 6th! 

Of course, if you don't want to come for the fun and excitement or for the delicious buffet dinner served by Cielito Lindo Fine Mexican Cuisine, there is always the matter of winning some terrific prizes. The Santa Claus Club: Where Santa Comes to Town - Year Around!
 
 
    
What a pleasant thing it is to get to know this guy named John C. Fowler III who, many years ago helped a friend throw a children's Christmas party at JJ's Cantina in Cholla Bay which he co-owns with partner Joe Anacleto. His friend, Agustín León, had come to John with an idea to have a party for the local kids from Cholla Bay on Christmas Day.
 
John remembers, "I gave him some money to buy candy and cookies and he was to go around and tell the children to be there for the party. My job was to provide hot dogs, chips, soda and children's movies at JJ's."
 
"The first year there were 40 children in attendance and the rest is history", added John.
 
Since that first party of 40 local kids, the Santa Claus Club (SCC) has been providing food and clothing, toys and bicycles, school supplies and household items, to the needy families of Puerto Peñasco. For the first 24 years, this was accomplished on Christmas Day at the annual party.
 
In 2007 the format was changed to a year around program. SCC now provides their community donation services directly to the needy neighborhoods (barrios) on a weekly basis. "It...gives us a better understanding of the needs of the families we are trying to help", explains John.
 
Did that work? John keeps a record and posts a simple but thorough summary of what was distributed each week on his Facebook page, and keeps a running total as well. The stats from 2007 through the third quarter of 2013 show that 6117 food bags totaling 248,010 pounds; 2,791 bicycles, 32,059 toys, gifts and school supplies, and 99,645 pounds of clothes have been distributed to needy families by the Santa Claus Club.
 
John adds, "Besides the items we keep totals on, we have passed out thousand[s] of pairs of shoes, blankets, towels and sheets. We have also made donations to the Casa Hogar (seniors home), Bomberos of Rocky Point (fire department), Red Cross, Santa Fe Clinic, Santa Maria Clinic, Clinic San Jose, Sandy Beach Clinic and the DIF Orphanage."
 
Obviously, the SCC works year around collecting items for delivery into the barrios and if you have anything to donate, it can be dropped off at the Baja Hotel and Cantina in Puerto Peñasco or at JJ's Cantina in Cholla Bay.
 
In addition to the weekly volunteer efforts that, by the way, are carried out mostly in John's big ol' truck and as many volunteers as he can muster, there are more than a handful of fundraisers that take place several times a year. Many have become annual institutions, like the semi-annual "One Club Golf Tournament" at JJ's Cantina; the Chili Cook-offs  and the Baja Cantina sponsored "Over the Line Softball Tournament" held on Sandy Beach. There are cornhole tournaments, garage sales and auctions during the year as well. All are a lot of fun, and everything goes 100% to the needy families and organizations of Puerto Peñasco.

Just as JJ's Cantina has been an icon for tourism for three decades, so has the Santa Claus Club been a living legacy for the needy of our community over those three decades.
The High Number of UTV and ATV Accidents in Puerto Peñasco is Alarming
 
 
 
Héctor Vázquez del Mercado, president of the Puerto Peñasco Convention & Visitors Bureau (OCV), reported that, with more than 125,000 visitors and economic revenue of over 100 million pesos, Semana Santa (Easter Week) has solidified itself as the annual holiday in which the highest number of accidents of "Rhino" type UTV vehicles and ATVs occur.
 
* In 2018 alone more than 200 accidents were attended, with almost the same number of people sustaining serious injuries and/or amputations in any of extremities.
 
* A high number of injured are US tourists who have had to be transferred to their country for further treatment after stabilization from the emergency.
 
The reckless handling of UTVs and ATVs is a serious problem in Rocky Point, causing a high number of accidents, leaving alarming numbers of people with serious injuries, and even a high incidence of amputations of extremities or fingers of the hands.
 
The local authorities responsible for monitoring that those who drive this type of recreational vehicles urge people to comply with traffic laws and to drive in a prudent manner under the guidelines of the Department of Traffic and Municipal Public Safety, which continues to seek ways to reduce this problem.
 
But little has been achieved, even when authorities require those who rent ATVs and UTVs to provide and require the use of a helmet for all drivers and passengers.
The majority of injury from accidents are from the result of rollovers. It is common for people who offer rentals of the vehicles to allow minors, or those under the influence of alcohol or drugs to leave with the vehicles, even though it is against the law for them to do so. Many who rent the vehicles quickly remove their protective helmet as soon as they are out of sight of the rental place. Adding to the problem is the "overpopulation" of UTVs and ATVs on busy holidays, as well as the inexperience of the drivers who accelerate rapidly or turn sharply on sandy terrains, in many cases ending with tragic results.
 
In an interview with Dr. Francisco Javier Carrillo Ruiz, Director of Civil Protection and Firefighters of Puerto Penasco, he said that it worries that in recent years, the number of accidents by rollover of "Rhinos" has increased dramatically.
 
Carrillo Ruiz clarified that the civil protection laws do not stipulate any regulation or sanction for the improper use of these recreational vehicles when they are offroad, but at the end of the day they are motor vehicles that circulate within traffic, so those who rent them must comply with what the municipal authority demands in terms of permits and regulations. It is when the people who drive them fail to comply with the laws and recommendations that accidents occur.
 
A couple of years ago, as Municipal Civil Protection Authority a meeting was held with those who rent these recreational vehicles, in order to issue some recommendations to improve safety measures and thus reduce accidents, or otherwise reduce the injuries suffered.
 
These recommendations included placing hand grips on the inside of the vehicles, as well as requiring that they have doors, since these two situations are the ones that cause more injuries or amputations because people always tend to place their hands outside the vehicle holding on to the rollbar, or at the moment of overturning they tend to stick out their leg as a support, ending up crushed by the unit.

Mexico Prohibits Used Clothing Imports


   
Many Southern Arizona charity organizations have sponsored clothing drives, sometimes dodging Mexican Customs and red 'revision' (stop) lights when they take the clothing into Mexico.
 
For health and sanitation reasons, Mexican federal law prohibits bringing used clothing and blankets into Mexico without having acquired the necessary permits.
 
It is also necessary to get permits before crossing commercial items, food, or new items for donation.  
 
In interviews conducted with various Mexican Customs employees and other officials, all agreed that the policy prohibits importation without the necessary paperwork. Each person contacted asked not to be directly quoted.
 
One individual said that all types of donations, no matter what the product, must be brought into Mexico with the aid of the Integral Family Development (DIF) branch of the Mexican government.
 
The DIF directs donations, obtains permits, and takes all other necessary steps to make it possible for an organization to import goods into Mexico. The permits then have to be presented to Mexican Customs when crossing the border.
 
Some people assume that the red light/green light stop by the Fiscal Police at the border is a game of chance, and are unaware of the consequences.
 
If a 'revision' is ordered at the port of entry, individuals found to be illegally transporting goods could be sent to Customs for processing. They will be charged taxes, they will be fined, and the merchandise will be confiscated, according to individuals interviewed.
 
Fines are assessed "depending on the value of the merchandise and on the magnitude of the problem," one individual said.
 
If a tourist crosses the border with personal items and used clothing not intended for donation, there should be no problem. However, if the Fiscal Police stops a person in possession of excessive amounts of clothing, the situation will be addressed accordingly.

Kyle Allen gives back during summer break



While many NFL players travel to international beaches during their summer vacation to relax and unwind, Panthers quarterback  Kyle Allen spent part of his break in Mexico helping build a house for a family in need.

Allen was connected through his agency to a group called  1MISSION, a charity that gives "people in poverty the opportunity to earn a house by serving their community."

"When my agency reached out to me about this opportunity," Allen said by phone this week, "I really liked the idea of the organization - of people contributing to their community and having some ownership throughout the process."
Last week, Allen traveled to Puerto Penasco and teamed up with Broncos cornerback Isaac Yiadom and Buccaneers running back Peyton Barber. They laid concrete, built walls and helped set the foundation for a new house in the community.

"I had never done construction before," Allen said. "It was a humbling experience. You definitely gain a greater appreciation for people that do this and how hard this work is. It was also really cool to work alongside the family that was going to live in the house. You get to really build a connection with them and feel like you're making a difference."

For Allen, the experience carried an extra meaning because it was just hours from his hometown of Scottsdale, Ariz.
"That area is a big resort area and I had traveled there with my family before," Allen said. "So to go down and really do and see something different was cool."

Signed as an undrafted free agent after the 2018 draft, Allen spent time on the Panthers' practice squad before starting the season finale at New Orleans. He threw for 228 yards and accounted for three touchdowns (two passing, one rushing) in a 33-14 win.

Allen has done a number of community service projects back home in Arizona and plans to become more involved in Charlotte this year as he returns for his second season.

"I've always been interested in giving back to the community wherever I am," Allen said. "We have a tremendous role model in Cam (Newton), and I look up to the things that he has done here in Charlotte. As professional athletes, I feel like we have a responsibility to give back to others."

It's Not Plastic, It's You


 
Municipal Administration Commemorates World Environment Day
 
In commemoration of World Environment Day on June 5th, the Office of Ecology and Sustainable Development launched the No es el plástico, eres tú (It's not plastic, it's you) environmental awareness campaign with formal delivery of four containers aimed at recycling plastic and batteries, as well as collection of cigarette butts and plastic tops.
 
"We are obligated to establish foundations for the new Peñasco we all want for our future generations," stated the mayor, "through public policies to reduce the use of plastics; this initiative aims to reduce the use of straws and single use plastic bags at convenience stores by 70%."
 
Ecology and Sustainable Development Director Pedro Miguel Romero López explained that on June 5, 1974, the United Nations first commemorated World Environment Day with the goal of reflecting and acting on countering the adverse effects caused to the environment on a global scale.
 
He further announced a project to build a municipal plant nursery, as promoted by the mayor, which would develop regional trees and vegetation in order to contribute to improving air quality, urban image, and reforestation of green areas across the city.

Municipal Administration Furthers Environmental Awareness Campaigns
 
In commemorating World Environment Day, as well as World Ocean's Day, the Deputy Office of Culture, Training and Ecological Awareness held a fifth beach clean-up campaign in the area of Playa Hermosa.
 
Alma Angelina Yanes, Deputy Director of the municipal office, detailed on this occasion students, parents, and teaching staff from Ventura G. Tena Elementary school took part in the clean-up, along with the Youth Patrol of Puerto Peñasco, the Municipal Culture and Art Institute, and other municipal offices.
 
She detailed the main goal of the beach clean-up campaign is to create awareness among children, youth, and adults as to the importance of keeping our beaches clean while caring for the environment, flora, and fauna.
 
In further commemorating World Environment Day, members of the Puerto Peñasco Youth Patrol launched the ecological project "How to plant a seed", by learning to plant a seed in an eggshell for the start-up of a garden within the recently named Recreational Center at El Lapiz park.
 
These environmental campaigns and projects, explained Yanes, join national initiatives to care and preserve the environment while also working to extend Puerto Peñasco's clean beach certification, or improve existing certification to the "Blue Flag" level.
Searching for Sand Dollars?  

 

If you've been frequenting Puerto Peñasco for longer than a decade you probably have fond memories of the days when sand dollars were plentiful all along the beaches from Encanto to Sandy Beach.  All you really had to do was wait until the tide cycle was around five feet or less in depth and look carefully to find them partially buried in the shallow sandy bottom near the beach. They came in all sizes, too, remember? The fragile baby ones that were about the size of a quarter you had to handle so carefully or they would surely break before you could get them back to your camp site or trailer.

Remember the shrill of excitement that echoed along the beach when the kids found a perfect three incher or especially when one discovered a "giant" five incher?  And you could actually find enough to break a couple of them apart and tell children gathered around the story or read the poem of  the angels (or doves) as you removed them from the center so fragile and beautiful, so full of meaning and hope. The look of wonderment on their captivated little faces alone was worth the trip.

Yes, those were the times that made childhood adventures, cultivated healthy curiosity, lifelong memories and laid a foundation for appreciating the timeless treasures beneath the sea.  

So where did all the sand dollars go? Not to mention so many other small artifacts which were such fun to collect? 

They're not only harder to find nowadays, it's a rarity to run across an intact sand dollar along the miles of lush beaches on which the sea still uses the tide cycle to bring us beautiful shells in thousands of colors, shapes and sizes.

Can you keep a secret? Besides the billion or so Facebook, Twitter and Google, try not to spread this sure fire formula for finding sand dollars around any further, okay?

Well, it's a timing thing, and a geographical thing, and an equipment thing, all of which are within easy reach for most everyone who frequents our little slice of paradise. Here's the simple formula you need to follow and still find all the sand dollars you can haul back home:
  1. Timing: There are three to four days every month, which are the days before, during and after a full moon when the tide variance is the most radically high and low. Time your search to begin about an hour to a half hour before the tide reaches its lowest level. It will still be "going out" as most of us say (even though that is not exactly correct as the official state of a tidal cycle is measured as "high-flowing" or "low-ebbing" as opposed to going "in" or "out"). When the tide is ebbing it stirs up the sand dollars that, being so thin, tend to slice into the sandy sea bottom as they settle and partially or completely hide themselves.
  2. Location: Next, you have to be where the ebbing tide has sand dollars to stir up.  One of the best, if not THE best location for this to happen is in Cholla Bay.  Specifically, if you take the first dirt road past JJ's Cantina down to the sea when it is low enough that you have to walk out maybe 50-75 yards to get ankle deep and start looking into the clear water ahead of your feet-voilá!You should start spotting sand dollars, and as your eyes become accustomed to recognizing the shape of one that is partially buried, you'll begin to see more and more, and that's why you need C below:
  3. Equipment: Bring a big strong handled bucket because wet sand dollars, while one at a time don't seem that heavy, as a bucket full will wear you out before you get back to the car. A long pokey-type pole is handy also to gently pry a suspected sand dollar before bending down to pick it up only to discover it broken.
So there you have it. 

One caution, in the interest of conserving our natural resources for future generations, please take only the sand dollars you need, and only those you need, lest Cholla Bay ends up like the miles of beaches before it, and your children's children miss the opportunity to appreciate the timeless treasures  our sea has to give.

Puerto Peñasco Clean Beach Committee Advises Guaymas on Beach Certification
 
With the goal of sharing the successful experience of having obtained clean beach certification in Puerto Peñasco, which is currently the only one in the state, members of the Peñasco Clean Beach committee visited Guaymas/San Carlos, Sonora to meet with city officials and other sectors interested in achieving similar certification for their beaches.
 
Luis César García González, Director of the Federal Maritime Land Zone in Puerto Peñasco (ZOFEMAT) detailed Puerto Peñasco first achieved clean beach certification in 2017, which it has been able to successfully maintain under the current administration.


 



   
City Council Approves Initiative to Reduce Plastics
 
To promote environmental conservation, as well as the preservation of flora and fauna in the municipality of Puerto Peñasco, City Council members approved an initiative aimed at reducing the use of plastics while working to take advantage of it in a comprehensive manner.
 
Mayor Kiko Munro thanked the council for approving public policy promoted by his administration through the Office of Ecology and Sustainable Development under this campaign of "It's not plastics, it's you."
 
The goal is to reduce the use of straws at local establishments by 70%, as well as eliminating the use of plastic bags at convenience stores. This, he explained, is to be done through involvement of organizations such as CANACO, CANIRAC, as well as street vendors, in addition to creating projects that take full advantage of plastics in manner that reduces environmental impact.


 
 
   
 
 
 
Mayor Kiko Munro Delivers Home Improvement Materials to Local Families
 
Mayor Kiko Munro led this year's second delivery of home improvement materials to local families taking part in the "Saving for your home" housing program.
 
On this occasion, the program delivered 5,030 cement blocks, along with 92 Rotoplas water tanks, 2,160 bags of cement, 67 buckets of weather proofing material, as well as 1560 roofing sheets to families in need of assistance from the municipal administration.
 
"We are grateful to families for their interest in registering for this program," expressed the mayor, "which we conducted through the Mariana Trinitaria Congregation and with local suppliers. New Telephone Dialing System in Mexico


 
Beginning on August 3, new telephone dialing rules will apply in Mexico which will eliminate some prefixes such as 01, 044 or 045. From that point forward, it will only be necessary to dial 10 numbers, regardless of whether calling Tijuana or Mexico City, or Puerto Penasco.

Although this change is quite simple, it is important to make note of it and possibly to change numbers saved in your phone. Also be sure to check any saved emergency numbers to be sure that you have them programmed correctly in the case of urgent need. (066 and 911 will not be changed)

The change is meant for convenience and will not add any additional costs or charges. There is no need to change any telephone equipment or perform any special procedures. Just change the way that you dial the numbers. This change will be universal as it was mandated by the Federal Institute of Telecommunications.
 
Landline calls: All numbers will be 10 digits, so in the Puerto Penasco, for example, you will only have to add area code to the local fixed numbers. For example: 638-123-4567.

Cell Phone calls: It is no longer necessary to dial 044 to call your local cell phones and 045 to call those in another State. Now you only have to dial the same 10 digits.

National calls: Regardless of whether you call from a cell phone or landline, you will not have to dial 01. It will be enough to include the area code and the local number.

International calls: if you are calling from abroad to a mobile number in Mexico you will no longer have to add "1" to the dialing (it will no longer be (52)1-638-123-4567 but only (52) 638-123-4567. In the case of calls from Mexico abroad, the method of dialing will not be changed.

Emergency numbers and services: There will be no changes. You will continue marking them as they have been, such as 066, 911, etc.

Who Will Inherit Your Property in Mexico?



Note: If a foreigner owns property through a Bank Trust, the Trust Deed provides the names of the first and second beneficiaries of the Trust. In that case, a certificate of death needs to be provided to the Bank Trustee who then is required to change the name of the Trust to the benefit of the named beneficiaries. Property held through a Bank Trust is not included or referred to in a Will made in Mexico. 

Many foreigners invest in in Mexico to benefit from the high returns on investment that this market offers, to enjoy their leisure time here by owning vacation property, to retire, or a combination of all of the above. Ironically, few foreigners give any thought to what will occur to their property in the event of death. The purpose of this article is to provide some insights on how Mexican Law will deal with property owned by foreigners upon death and, hopefully, will provide some suggestions on how to deal with this situation.
 
A foreigner with property in Mexico who dies will have their property distributed to their legal heirs, depending on whether they die without a Will (ab intestate), with a Mexican Will, or with a foreign Will.
 
If a foreigner with property in Mexico dies without a Will, the law provides that their property is divided proportionately between their legal spouse (and not common-law spouses) and their children. The process is complicated and requires the translation and certification of foreign documents such as marriage certificates, marriage contracts, birth certificates of the children and, if they are minors, the representation of those minors by an independent tutor in Mexico. The process can take more than a year to resolve and the property, in the interim, needs to be administered until they are transferred to the rightful heir. The cost can be considerable.
 
A foreign Will is legally valid in Mexico. However, it is inconvenient and it can be costly to have it recognized and acknowledged in this country. The process to have a foreign Will recognized in Mexico is as follows, the steps need to be done consecutively and in order: the Will needs to be probated in the jurisdiction or residence of the deceased; once probated, the Will must be legalized in Canada, or apostilled by the Secretary of State in the United States. Other countries have the same process but different government authorities will have the documents apostilled.
 
Once this is accomplished, the certificate of death, the Will and the Probate decision must be sent to Mexico to be translated into Spanish by an official translator in the state and district where the property of the deceased is located. This technically constitutes a second Probation of the Will were a judge acknowledges the testator's directions and, in some cases, will require the presence of the heirs or representatives in Mexico during the reading of the Will.   A judgment is then issued instructing notaries (for real estate) or financial institutions (for bank accounts) to transfer the property to the name and benefit of the heirs. It can take six to nine months or more for this process to be completed and the costs are determined by a percentage of the value of the assets being transferred (one to three percent) plus expenses, if any. 

For property, including real estate that is not held within a Bank Trust, a Will made in Mexico identifies the beneficiaries (general heirs that inherit all the property) and specific legatees (individuals that inherit an identified item or amount of money). It also appoints an executor who will administer the property until it is transferred to the heirs and will assist the notary with this process.
 
A foreigner needs to go before a Notary in order to grant his/her Will made in México. Lawyers can act as legal counsel and advise foreigners on how to structure their Wills, transfer their property and consider certain fiscal consequences on the transfer of property. Most lawyers prepare the Will on behalf of their clients, in Spanish, explain the contents to their clients in their language of choice and then have a Notary register it to give it full legal effect. The Will needs to be signed in the presence of the Notary.
 
There are three steps to follow to Probate a Will made in Mexico. The first step is called Radicación where the Will is opened and the Notary reads it to all the beneficiaries in the presence of the Executor. The Executor of the Will is recognized and acknowledged and they must accept this position as administrator. Beneficiaries need to accept or refuse the inheritance of the estate. The second step is the publication or edictos. At this stage, the Notary will send an official document to two publications that are wildly circulated in the State where the Will is opened and also to the official newspaper of the State informing the general public of the existence of the Will, and to provide them with the right to claim an interest against the estate. If no-one files a claim within 40 working days, then the process will continue to the third and final stage. The final step is referred to as the escritura de adjudicación where the property is officially transferred to the name and benefit of the heirs.
 
If there is a claim against the estate, or if there are any minors involved, then the process is referred to the local courts who will decide on the claim or who will assist the minors for the transfer of the property.
 
Finally, property transferred on death is not subject to any capital gains in Mexico but, in some cities, will be subject to transfer duties if it is real estate.
Mexico's Tipping Culture

Tipping is woven into the fabric of Mexican social and trading culture. The tipping ritual is so commonplace that it is also plays a significant role in Mexico's informal, cash-driven economy.
 
Most people working in Mexico's service industries including porters at the airport, the waitress at the café, the attendant in the rest-room and the service personnel at your hotel, earn modest wages and rely upon tips (in Mexico referred to as "la propina") to augment their weekly take-home pay.
 
Ironically, despite the constant need to pay tips, small change can be difficult to get hold of in Mexico when you need it most, and appears in abundance when you don't need any. It's good practice to build-up a cache of small change as you shop. The $20 peso bill is popular for tipping and it is nice to have enough to go around.
 
Mexico's tipping culture is impromptu and often spontaneous. Tipping is always optional, although the people serving you will always appreciate the small token of your appreciation in exchange for good service.

Chef Daniela Soto-Innes runs New York city's best Mexican restaurants, Cosme and Atla (and a new spot opening up in LA). She's been in the spotlight since winning the James Beard Rising Star Chef award in 2016, a precocious achievement for the then-25-year-old.  
 
Daniela was born in Mexico City and moved to Houston, Texas with her parents when she was 12 years old. She learned to love cooking from her mother and grandmother, who taught her that "food tastes better when you put love and joy into it," according to her post-win interview. She lives out this philosophy in her restaurant kitchen, where she and staff blast music and sing.
 
"You have to be happy when you're making a mole or tamales - otherwise they won't turn out," she says.
 
Her kitchen may be filled with music and laughter, but Daniela is serious about cuisine. The ambitious young chef started working in kitchens when she was 14 and attended Le Cordon Bleu before traveling to Europe and New York to train.  
 
But Daniela doesn't require her staff, which are mostly immigrants from Mexico, Latin America, even Russia, to have formal training. She thrives on empowering cooks of all ages and backgrounds, learning from them as they learn from her and each other.
 
"We might not know everything about cooking but we all strive to do the best we can, using the most knowledge we can collect between all of us. Cosme is somewhere where people from all cultures - Russia, Mexico, Colombia, Venezuela, Brazil - come to the US to make a little bit more money for their families."

Getting Your Documents Apostilled (Notarized) for Mexico


 
Apostille for Legal Documents

For certain legal procedures, usually related to immigration, residency,Real Estate purchase, or marriage (or a combination of these) it may be necessary to present Mexican authorities with foreign legal documents as part of application procedure-foreign birth certificates and foreign marriage certificates are the most common.
 
Before the Mexican authorities will receive foreign-issued legal documents for processing, it's necessary to get these Apostilled, sometimes referred to as Notarized.
 
The Apostille Convention, as it's known, is an international treaty which many (but not all) countries are signatory to. The convention sets out a procedure through which a document issued in one of the signatory countries can be certified for legal purposes in all the other signatory countries. Mexico signed up to the treaty in 1995, making it far simpler for foreigners to present their legal documents here. The US, Europe, Australia, New Zealand, Russia, India, South Africa, and Japan are among major countries also signed-up to the treaty. If your country is not a signatory, alternative certification procedures may exist, and you should contact your consulate for advice.
 
Note for Canadians: Canada is not signatory to the convention, and the procedures do not apply there. Canada has instead a notarization procedure for legal documents.
 
In practice, when you need to submit legal documents in Mexico which were not issued in Mexico-such as birth, marriage, divorce, and death certificates, diplomas, certificates of company incorporation, etc.-you need to go to a "competent authority" in the country where the document was issued, and get any certified copies Apostilled. Each country has its own procedures for doing this and you should search online for more information, e.g. "apostille of documents in [country] or [state]".
 
If you show up at the application center in Mexico (most usually an Immigration or Notario's office) without these types of documents having been Apostilled they will turn your application away.
 
Another point to note: If you get married in Mexico and live abroad (or plan to live abroad with your Mexican spouse) it's a good idea to get your Mexican marriage certificate Apostilled (Notarized) in Mexico in case you need this for official use outside of Mexico; it needs to be done in the Mexican state you were married in. The local Registrar's office or your wedding planner will be able to advise you about how to do this.

Agua de Jamaica - Hibiscus Iced Tea
 


Agua de Jamaica is one of Mexico's most popular agua frescas. This version uses less sugar but feel free to sweeten it up if you want to. So good! mexicanplease.com
 
You'll definitely find these Hibiscus flowers in Hispanic markets, but even some general grocers are starting to carry them. Sometimes you'll see them labeled as Flor de Jamaica.
 
Give 'em a squeeze and buy the ones that are still soft, if they are hard and brittle they are probably a bit past their prime.  Then it's just a matter of steeping the flowers and you've got an authentic batch of Agua de Jamaica on your hands.
 


Next time you come across one of these bags of Hibiscus flowers, consider buying it - you can use them to make a delicious batch of Agua de Jamaica, one of Mexico's most common agua frescas.
 
 
Agua de Jamaica Recipe:

Agua de Jamaica is as close to the source as you can get, and it might make you view the tea aisle in the supermarket from a newfound perspective.
 
The process is simple. And ancient.
 
Add 1.5 cups of Hibiscus flowers to a pot along with 4 cups of cold water. Bring to a boil and then remove the pot from the heat.
 
This version uses less sugar but feel free to sweeten it up if you want to.
 
Set aside, cover, and let this steep until it cools, 30 minutes or so.
 
Strain the mixture and discard the flowers (although some people save them for tacos?!!).
 
You're left with 4 cups of Agua de Jamaica concentrate that will conveniently fit into a quart-sized Mason jar.
 
This is a concentrated mixture that will give you leeway on how much you want to dilute and sweeten the final product.
 
Most versions in Mexico are bombed with sugar, but for me that is no bueno and over time I've been using less and less sugar. I've also stopped diluting it as much (by adding water) and instead prefer to drink it when it's potent and barely sweetened.
 
So you can consider the instructions a starting point only, feel free to adjust based on your palate. (Most peeps will want a little more sugar.)
   
Serve over ice and just like that you've got a delicious, homemade Agua de Jamaica that is as close to the source as you can get.
 
So the next time you come across a bag of Jamaica flowers toss 'em in your shopping cart. Who knows, maybe it will have you questioning your morning beverage and heading towards something a bit simpler.

When Mexicans make fun of Anglo-Saxon efforts at speaking Spanish, they usually focus on the flat r's and incorrect verb conjugations.

Although foreigners from different parts of the world make different kinds of errors in pronunciation, it is almost invariably those made by English speakers that are the object of fun, most likely because Americans make up the majority of the foreign visitors to Mexico.

Francophone Canadians, for example, who pronounce their r's flat when speaking English, often revert to the guttural French 'r' sound when speaking Spanish or pronouncing a Spanish name.

When caricaturing the Anglo-Saxon Spanish accent, it's also common to use all verbs in the infinitive. This is more comic than accurate. Even though errors of conjugation are frequent, very few foreigners use all verbs in this way. I once heard an American tourist say "puedemos iremos?" for "can we go?"; but even then, he clearly knew that you don't just apply verbs in their raw state.

Some common mistakes made by English speakers are easily corrected. For example, many people pronounce the country's currency as "PAY-soe" instead of "PEH-soh." This is probably because some dictionaries and phrasebooks give this as an approximate pronunciation, since the  'e' in Spanish is slightly sharper in sound than the short 'e' in English. Nevertheless, the 'e' in Spanish is much closer to the 'e' in "red" than to the 'a' in "gate." Also, the 'o' should be pronounced like the 'o' in "gone," not the 'o' in "boat."

Saying " la problema" rather than the correct " el problema" is another,  quite easily remedied mistake.

One real difficulty for some people is trilling the 'r', as difficult as it is for some native Spanish speakers to pronounce the 'th' in English. In Spanish, a single 'r' is trilled once, and the double-'r' twice. The single 'r' is also trilled twice at the beginning of a word, or after an l, n, or s - for example " alrededor" (around), " enredar" (tangle).

Some native speakers pronounce the letter's name as a single r - " ere" - while others pronounce it double - " erre." Both are acceptable.

The technique for trilling r's is to vibrate the tip of your tongue on the back of your front teeth (or the palate around there). It takes some practice to be able to differentiate between a single trill, and a double trill (without going ape and turning the double-trill into a growl).

Not surprisingly, some Spanish tongue-twisters involve the letter 'r'.

A well-known nonsense phrase is: " tres tristes tigres tragando trigo en un trigal" - three sad tigers scoffing wheat in a wheat field.

Another is " camarón, caramelo; caramelo camarón" (shrimp, candy; candy, shrimp). The idea is to repeat the phrase several times quickly without saying " caramón" or " camarelo."
