I made this recipe over the weekend and enjoyed it for two days. You can add more than the 3 cups of chicken stock to dilute the meal, to last longer. Just add more chicken or vegetables as you go. If not, the stock (after the meal is cooked) is delicious and a good base for the next meal idea.
The meal is really simple, after you shop and pick up the ingredients. I used a can of whole stewed tomatoes (or use diced) instead of chopping up fresh tomatoes. Try picking up the canned tomatoes with Italian spices. The added spices help to “kick up a notch” the meal and you don’t have to try as hard when adding spices to your meals.
Also, I always use brown rice and I cooked the rice separately. I do this so the rice doesn’t soak up all the chicken stock and you have rice left over for another meal. I always season my rice after it is cooked and rinsed (with olive oil, sea salt, pepper, garlic, oregano, basil, and add a little chicken stock so it doesn't stick to the pan when you flavor it and warm it up).
