Can you believe Summer is almost over? If you have not completed your summer bucket list, it's time to start checking off some of those activities. It is important to keep your body moving even in the Memphis heat. Try getting involved in more cool activities like swimming, water activities, or cookouts close to air conditioning. The summer is a perfect time to let the kids or grandkids explore, run off energy, and connect as a family. Host some fun family game nights to build stronger relationships and make fun memories together. We love hearing about your summer adventures during your time at The Smith Clinic and look forward to seeing you soon!
Welcome to the Smith Clinic Team
Ellie Grace Darlington, Marketing Coordinator

If you have come into the clinic recently, you may have seen a new face. Ellie Grace is a recent graduate of The University of Tennessee, Knoxville and will be taking over our Marketing Coordinator position.

Why she chose Marketing and Communications:
"When considering my career path, my desire was to work directly with people and have an outlet to express some creativity. I went through college majoring in Child & Family Studies, Psychology, and ultimately settled on Communications. I love understanding how and why people communicate the way they do, as well as, finding creative ways to guide ingenuity and promote individual achievements. Marketing and Communications allowed me to tie the two aspects I desired the most from a professional setting into one career path."

Some fun facts about Ellie Grace:
-She is the middle of two brothers.
-She enjoys reading, long walks, and country music
-One of her goals in life is to adopt at least one of her
children.

When asked what excites her the most about joining The Smith Clinic she answered, "I am excited to be a part of a team that embodies Christian principles and provides a family-like culture among coworkers. I truly believe The Smith Clinic will be the perfect place for me to learn and grow as a person and as a professional."

Covid-19 Guideline Reminders
As the Covid-19 (Coronavirus) pandemic continues to evolve, The Smith Clinic maintains its mission to ensure patient and staff safety. With that in mind, we have implemented new protocols to help "flatten the curve" and stop the spread of coronavirus. Please read the following closely to stay informed of treatments and procedures currently offered at the clinic:

Out of precaution for our patients, guests and staff, we ask that all individuals within 6 feet of another individuals wear a mask while inside the clinic.

#ChoosePT Public Awareness Campaign

As Physical Therapists and Physical Therapist Assistants, we understand that moving the body is a foundational aspect of our health. To get more people moving, the American Physical Therapy Association is launching a new campaign using the hashtag #ChoosePT. Research has suggested that the inactivity level of most Americans is static, making this campaign extremely important. The Association is hoping to increase activity levels in the public and champion change throughout the American population. August is a perfect month to start implementing changes in your own life.
Summer Time Favorite Recipes
Blueberry Skillet Cobbler
Ingredients
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon minced dried lavender
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1 cup granulated sugar plus 1 tablespoon
  • Juice and zest of 1 lemon
  • 1 scraped vanilla bean
  • 2 cups blueberries
  • Vanilla bean ice cream or lightly sweetened whipped cream, for serving, optional
Instructions
  • Step 1: Preheat the oven to 350 degrees F. Place the butter in a 10-inch cast-iron skillet and transfer to the preheated oven to melt. 
  • Step 2: Meanwhile, mix together the flour, baking powder, lavender and salt in a bowl. Stir in the milk, 1 cup sugar, the lemon juice, zest and vanilla to combine. Mix together the remaining tablespoon sugar and the blueberries in another bowl. Remove the hot skillet with the melted butter from the oven and pour in the batter. Top with the sugared blueberries. Bake until brown and the batter has risen up and around the fruit, about 30 minutes. 
  • Step 3:Transfer to a rack to cool slightly. Serve with vanilla bean ice cream or lightly sweetened whipped cream.


Easy Bacon and Cheese Quiche
Ingredients
  • 1 (9 inch) deep dish frozen pie crust
  • 1 (3 ounce) can bacon bits
  • ½ cup chopped onion
  • 5 ounces shredded Swiss cheese
  • 3 ounces grated Parmesan cheese
  • 4 eggs, lightly beaten
  • 1 cup half-and-half cream
Instructions
  • Step 1: Preheat oven to 400 degrees F (200 degrees C).
  • Step 2:Place unthawed pie crust on a baking sheet. In a medium bowl, mix the bacon, onions, and both cheeses. Pour this mixture into the crust.
  • Step 3:Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.
  • Step 4: Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, until top of quiche begins to turn brown.


Strawberry Spinach Salad
Ingredients
  • 1 Spinach Bag (greens of choice)
  • 3 cups of strawberries
  • 2 cups sliced red onions
  • 1 cup chopped pecans
  • 1/2 cup of Feta cheese crumbles
Instructions
  • Mix of spinach & other greens: Tip: spinach salads that are 100% spinach can be intense on the flavor. How to fix it? Add some mixed greens too! This strawberry spinach salad has 5 cups spinach leaves and 3 cups mixed greens.
  • Sliced red onions: Strawberries and red onion is a really great flavor combination! The savory bite of the onion is just perfect against the juicy berry.
  • Pecans: Chopped pecans add a crunch that’s a perfect texture contrast! Of course you could use any nuts you like: walnuts, pistachios, almonds, etc.
  • Cheese crumbles: This strawberry spinach salad is easily vegan (plant based) without the cheese. But for a savory, salty note, feta or goat cheese crumbles are perfection.
