Culinary Update

Effective September 8th, we are switching all Order Guides from Pacific Cod to Pacific Pollock. As we continue to optimize our order guides for improved quality and pricing, we have identified this as another area of opportunity to improve both quality and pricing. Please click here to see the crosswalk for your Sysco OpCo.

 

Alaska pollock contains more fat than Pacific cod, so its texture is a bit softer, while Pacific cod is slightly firmer. For the same reason, the content of healthy polyunsaturated fatty acids Omega-3 in Alaska pollock is almost twice higher than in Pacific cod.

Effective September 30th, all Next Level accounts outside of South Dakota will transition to Sysco as our primary food supplier. The decision to move to Sysco was based on several comparison metrics including a more aggressive costing structure, increased formulary compliance, additional DSSI integrations (live inventory, pick your substitute, real time order tracking), and a more efficient management of supply chain resolutions. All of that said, Sysco is not exempt from the product and staffing shortages every vendor (including us) are experiencing. Note that prior to go live, we will be sharing the product cross-walk from your current broadliner to Sysco alongside account rep contact information.

  • Using the Syscos Pick Your Own Sub features will help with our of stock situations but this does not replace the need to review your email confirmations and converse with your Sysco reps
  • NLH OG Add Request Form
  • This form is used to request order guide additions. This request can be for a permanent or short-term request. If only needed for a short amount of time, please designate how long you need this item on the formulary.
  • The approval path for this document is Building Manager > Regional Manager > SVP > Lynne Jasak & Jordon Miller. Any denials will be returned with reasoning. Most common denial reasonings include a like item is on formulary, recipe should be made from scratch, or the item should be bought by client/facility
  • Sysco reps will be instructed to not add any products to Next Level orders UNLESS this is directly related to out of stock/substitute product situations.
