Spring is HERE, and it has been a welcome sight to finally see the sun. Spring is a time of new beginnings so why not challenge yourself to make some positive changes in your lifestyle. Perhaps start eating more vegetables or try making exercise a daily priority. You can even check out our new 6:30am Group Cycling class to get you started! It's up to you and what you feel is best for your life. A new beginning can lead to positive changes in your life.   

NRC continues to have a constant buzz of activity every day. Participants are using the minigym, fitness center, attending group fitness classes, swimming in the pool and playing tennis on a daily basis. May is National Physical Fitness and Sports Month. Keep your eyes peeled for information regarding the importance of physical activity. 
 
REMINDERS:
  • A 24-hour notice is required to cancel any court reservation otherwise your credit card will be charged the hourly court fee. Free court time no-shows will be charged the $18/hr fee.
  • Please remember to re-rack your weights after use and to return all items to their original location.

Carrot Cake Cheese Ball


Servings: 12

Ingredients
  • 8 ounces reduced-fat cream cheese (Neufchâtel), softened
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup shredded carrot plus ¼ cup, divided
  • ½ cup diced pineapple
  • ¼ cup golden raisins
  • ¼ cup chopped toasted pecans
  • ¼ cup toasted unsweetened coconut flakes
  • Carrot greens for garnish
Directions
  1. Whisk cream cheese, honey, vanilla, cinnamon and salt in a medium bowl until combined. Stir in 1 cup carrot, pineapple and raisins.
  2. Coat a large piece of plastic wrap with cooking spray. Scoop the cheese mixture onto it. Using the plastic wrap to help you, form the cheese mixture into a ball, then completely wrap in plastic. Refrigerate for at least 1 hour and up to 2 days.
  3. Just before serving, combine pecans, coconut and the remaining ¼ cup carrot in a small bowl. Turn the cheese ball out onto a serving plate and form into a carrot shape. Coat with the pecan mixture. Garnish with carrot greens, if desired.
Make Ahead Tip: Refrigerate for up to 2 days.

Healthy Asian Lettuce Wraps

Prep Time: 20mins
Cook Time: 10 mins
Servings: 2

Ingredients
Sauce
  • 2 tablespoons soy sauce use tamari if gluten free
  • 2 tablespoons hoisin sauce
  • 2 tablespoons lime juice
  • 1 tablespoon peanut butter
  • 1/4 teaspoon ground ginger
  • 1/2 tablespoon Sriracha less if you don't like spice
Filling
  • 1 teaspoon sesame oil
  • 1/2 yellow onion diced
  • 1 pound chicken breasts cubed
  • 1/2 cup shredded carrot
  • 2 cloves garlic minced
For serving
  • 1 head butter lettuce
  • Salted Peanuts chopped
  • Green onions thinly sliced
  • Cilantro chopped
  • Cauliflower Fried Rice
Directions
  1. Whisk together the sauce ingredients and set aside.
  2. In a large skillet, heat sesame oil over medium heat.
  3. Once hot, add in onion.
  4. Cook for 5 minutes, or until the onion is tender.
  5. Add in chicken, carrots, and garlic.
  6. Cook until chicken is no longer pink.
  7. Once cooked, stir in the sauce and serve in a lettuce cup with cauliflower rice, peanuts, green onions, and cilantro!

Karis Carlson
NRC Personal Trainer

Karis moved to Chicagoland after graduating from college with a B.S. in Communications. After meeting her husband in Itasca, getting married and gaining thirty pounds in six months, Karis realized that she needed to take control of her health. She started with a twenty-minute DVD workout in her living room. Three years later, Karis completed five half marathons, five triathlons and her first marathon - all in one summer! She was officially hooked and decided to leave her corporate career to become a personal trainer. After six years training people of all ages and abilities, Karis still believes that anyone can learn to love fitness. She is always grateful for the privilege of helping others on their journey to health and wellness.
 
Currently, Karis lives in St. Charles with her husband, Brett, their three kids, Evangeline (4), Theodore (3), and Josephine (1), and their pets, Daisy the dog and Patty the python. She is also pregnant with her fourth baby - another girl - due in early June. When she's not at the gym, Karis enjoys spending time outside with her kids, baking breads from scratch, blogging about her zero-waste lifestyle, and reading all sorts of books.
Marla Scheckman Remrey
NRC Personal Trainer

After 20 years in the corporate world of sales and marketing, Marla decided one morning that she needed a career change. That was in 1998. By 2001,  after going back to school, she became an ACE certified Personal Trainer & Health Coach.
 
Many years prior to that, Marla was a health club manager at Jamnastics. She also worked for the Chicago Park District while in college. It was in college Marla where struggled with weight issues, but she has maintained a 40+ pound weight loss for a few decades now. She does not believe in dieting but rather in life style changes!
 
Always having a passion for fitness Marla's career has taken different paths from general fitness to post rehab, to sports. She likes clients that challenge her. Marla also mentors new and upcoming personal trainers; it's important to her to give back to the community. Marla enjoys working for the park district! Most recently she has been with the Bartlett and Dundee Park Districts, as well as providing in home personal training.
 
Some of Marla's interests include competitive running (she is one of the top runners in her age group 55-59, going into the next age group this year), napping, weight lifting, TRX, eating out, traveling, reading and corporate speaking & health coaching.
