A Message From your Northeast Region
Vice President
Greetings, fellow chefs. 

I would like to start my first newsletter by thanking everyone who worked on my campaign and for having the confidence in me to be your Northeast Region Vice President.
As summer winds down and we look back on Cook. Craft. Create. ACF National Convention & Show in Orlando, I hope we can keep the fire burning that we ignited. The positive energy flowing through the convention center was incredible. Let’s keep the energy accelerating!
Congratulations to all the national winners, competitors and nominees. From the Northeast Regions, Chef Mickey Beriau, CEC, AAC, who won the Herman G. Rusch Chef’s Achievement Award, and Chef Cher Harris, CEPC, who executive pastry chef, Hotel Hershey, won the Global Pastry Chefs Challenge during the Worldchefs Continental Tryouts for the Americas Competition . Chef Harris will represent the Americas in the finals at the Worldchefs Congress & Expo 2018 in Kuala Lumpur, Malaysia.
I would especially like to congratulate Chef Denise Graffeo, CEC, AAC, HOF, on her induction into the American Academy of Chefs Culinary Hall of Fame . Chef Graffeo is the first woman to break the stigma of the “Good Old Boys Club” and I’m quite sure she won’t be the last. Chef Graffeo has a long and celebrated career and truly exemplifies the term professional chef . Congratulations again, chef!

The Les Amis D’Escoffier Society of New York will be hosting the 81st Annual Fall Dinner celebrating Jacques Pepin on October 25 at The Current—Pier 59, New York City. Email kurtkeller@escoffier-society.com for more information. It is always a great dinner if you are in town and it was also the site of our ChefConnect: NYC AAC dinner.

We are in for a dynamic and enlivened two years. I believe we have chosen the right chef to lead us into the next chapter of our federation, and Chef Stafford has already got the ball rolling by challenging the new board to raise the bar. We have spoken about diversity and inclusion; now, it is time to put words into action.

In August, I attended The World of the Latino Cuisine Food Products & Beverage Trade Show at the Meadowlands. I went hoping to find new ingredients for my research and development ideas and met a chef from Cuba who is a member of Worldchefs. What started out as an ingredient hunt turned into a day of entertainment and culinary education.
I was introduced to the President and Vice President of the Federation de Asiciones Culinare de la Republica of Cuba. It turned out to be a delightful afternoon of watching them cook and conversing about our passions for our craft. I was asked to speak about ACF, and when I touched upon our renewed focus on diversity and inclusion, the international audience erupted in cheers. This confirmed to me that we are on the right track.

Northeast Region Award Winners
Chef Denise Graffeo, CEC, AAC, HOF, is the first woman to be inducted into the American Academy of Chefs Culinary Hall of Fame. Chef Graffeo was recognized for her achievements at the 2017 AAC Dinner in Orlando.
Chef Mickey Beriau, CEC, AAC, is the 2017 recipient of the Herman G. Rusch Chef’s Achievement Award, which honors chefs who have demonstrated the highest level of commitment to both ACF and the culinary profession.

Hurricane Disaster Relief
The well-being of our members is very important to us and we want to lift the financial burden of those without food, shelter, power or employment. ACF members may be eligible for support from the American Culinary Federation Education Foundation (ACFEF) Disaster Relief Fund.

ACF Young Chefs Club: Join Today!
ACF is continuing the ACF Young Chefs Club (ACFYCC) to connect young chefs (18- to 25-year-olds) across the nation and even the world.

ACFEF-Accredited Apprenticeship Updates
The Harrisburg Chapter will be launching a new 4,000-hour American Culinary Federation Education Foundation (ACFEF) apprenticeship program on Sept. 11, pairing Hershey Entertainment Group, Hershey Lodge and Hershey Country Club with the Lebanon County Career and Technology Center.

Are you currently involved in an apprenticeship program or were you involved with one in the past? Share your experience with ACF. National Apprenticeship Week, Nov. 13-19, is a nationwide event in which apprenticeships are recognized as a valuable career pathway. ACF will celebrate this as part of a month-long event and publish members’ apprenticeship stories.
Important Dates and Announcements
ACFEF, through the Chef & Child initiative, will award a total of 30 grants at $150 each to support ACF chapters and chefs hosting nutrition outreach activities in celebration of Childhood Nutrition Day on, or around, Oct. 16 . Apply today at www.acfchefs.org/CND .
Speaker proposals are being accepted for the 2018 ACF event series. All proposed sessions must demonstrate innovative trends, information or techniques of interest to the culinary profession. Submit your proposed session title, description, learning objectives, preferred conference and a brief bio by Sept. 30 for consideration.
ChefConnect: Charlotte, the Northeast/Southeast regional conference, will take place Feb. 25-27 at The Westin Charlotte, in Charlotte, North Carolina. ACF is offering a payment plan option until Oct. 1. Call the ACF national office at (904) 824-4468 and ask to speak with an events team member to take advantage of this offer.
