Harvest by hand, following ripening curves. Fermentation occurs with gentle grape pressing, cold skin contact and vacuum pressing is used along with a low-temperature maceration.  The entire fermentation process is carefully managed so the wine can preserve all of its delicate and  complex aromas.  Aged in steel.
With notes of pale yellow with green nuances; very delicate bouquet, fragrant with extremely pleasant aromas.  Very fresh and well-balanced flavors. With a crisp and elegant finish. Serve with creamy, savory dishes like

Parking
With current downtown construction, we recognize that parking is an issue for our customers. We are  aware of the parking challenge and would like to suggest that our customers consider parking in the meter parking spots behind our store on Kansas City St. These spots cost 25 cents for a hour!

Easy Goat Cheese Ravioli with Caramelized Onion Mushroom Sage Cream Sauce and Fig Balsamic Drizzle

Ingredients;
24 wonton wrappers
8 oz. fresh goat cheese
1 large egg
salt and fresh cracked ground pepper
1/3 cup thinly sliced onions
1-2 cloves of garlic, chopped
1/3 cup heavy cream
1/3 cup white wine
2 tablespoons of Mushroom-Sage Olive Oil
2 tablespoons of Fig Balsamic Vinegar

Directions;
Whisk together the goat cheese, egg, and salt & pepper for the filling. Set aside. Place half of the wonton wrappers on a lightly floured surface and mound a generous teaspoon of filling in the center.   Wet the edges around the filling with water and lay a second sheet on top. Thoroughly seal the edges of each ravioli. Begin to boil the raviolis in small batches for 2 1/2 to 3 minutes per batch.
For the sauce, in a large pan, sauté the thinly sliced onions and chopped garlic cloves in Mushroom Sage EVOO, over medium heat, until the onions become golden in color. Add the white wine to the onions and reduce by half. Add the cream and simmer for an additional minute whisking to combine. Season the sauce with salt and fresh ground pepper. Pour the warm cream sauce over the raviolis and toss. Drizzle with Fig Balsamic. Serve immediately.

Cypress Grove Purple Haze
Purple Haze is a fresh little goat's milk cheese from Cypress Grove Chevre in Northern California. This soft cheese is flavored with wild fennel, pollen and lavender. The combination of herbs with the smooth and creamy chevre taste is unique. Pairs well with Sauvignon Blanc or Riesling, semi-dry sweet wines.

This ORGANIC, artisan pasta is famous for its unique shapes and specially selected, pure wheat blends sourced exclusively in Italy.
These hard-to-find little tubes are ideal for holding sauce, in soups or for children who like small shapes. Cooks in roughly 8 minutes.
