What do you enjoy most about being a Nurse Practitioner?
Being that I am a new Nurse Practitioner, I am still learning what I enjoy most. The reason I decided to advance in my career as a nurse is because I wanted to collaborate with physicians to fill the need for more accessible health care within the community. I also enjoy providing my patients education about their health and preventive measures; this in return helps patients stay healthier longer.
Why did you choose Bon Secours Health System?
I have spent most of my nursing career working for Bon Secours Health System. What attracted me most to Bon Secours was its mission and values: bringing compassion to health care and good help to those in need. As nurses, we all want to help fix everything and everyone. Even though this is not possible, Bon Secours Health System has lived up to its mission and gotten me closer to this goal.
What do you enjoy outside of your work?
When I am not working, I enjoy spending time with family and friends. I also enjoy volunteering with the AHA and various community service organizations, working out, and traveling.

Jamaican Beef Stuffed Sweet Potatoes
In this dish, ground beef is spiced with a bit of curry and a splash of Worcestershire sauce and scooped into baked sweet potatoes for a delicious, sweet, and spicy dinner.
--Relay Foods Communications Manager, Lindsey Leahy
Ready In: 1 hour 10 mins
Prep: 10 mins
Cook: 1 hour Yields 4 Servings
Ingredients
4 sweet potatoes
1 Tbsp olive oil
Salt, to taste
Pepper, to taste
2 Tbsp butter
1 onion, diced
2 Tbsp curry
2 garlic cloves, minced
1 lb ground beef, thawed
2 cups beef stock
3 Tbsp Worcestershire sauce
Directions
- Preheat oven to 400ºF. Cover a rimmed baking sheet with foil.
- With a knife or a fork, poke holes all over the potato. Brush lightly with oil and sprinkle lightly with salt and pepper. Place the potatoes on the baking sheet and bake until tender, 45-50 minutes.
- In a large sauce pan, melt butter over medium heat and add onion. Sauté until golden brown, about 5-7 minutes. Add the curry and garlic, sautéing for 2-3 minutes longer, until fragrant.
- Push the onions and garlic to the edges of your pan, turn up the heat to medium-high, and add the beef.
- Cook the beef until mostly browned, with very little pink left. Turn up the heat to high and add stock and Worcestershire sauce. Bring to a boil and cook until liquid is almost entirely gone.
- When the potatoes are finished cooking, allow to cool, then slice in half and scoop out a bit of the middle.
- Spoon the beef mixture into the potatoes and return to the oven. Bake for about 10 minutes, until the beef is brown and slightly crisp.
