Campus Kitchen, University Outreach and Campus Dining work to increase access to nutritious food

Approximately 30 percent of college students at American schools are food insecure and Auburn is no exception. Research shows that lack of access to healthy food can lead to depression and anxiety, malnutrition, poor academic performance and higher dropout rates. Campus Kitchen, University Outreach and Campus Dining work in tandem to increase access to nutritious food.

Office of Outreach Global: Forging International Partnerships and Enriching Local Communities

The Office of Outreach Global is establishing new international connections. This past October, Dr. Royrickers Cook, VP of University Outreach, and Dr. Elizabeth Quansah, Director of Outreach Global, made exploratory visits to Tanzania and Rwanda in the East Africa region.

During their time in Tanzania, Drs. Cook and Quansah were accompanied by Dr. Joan Harrell, Director of Inclusive Excellence, from the College of Liberal Arts. They conducted educational and cultural explorations in Dar es Salaam to lay the groundwork for an upcoming educational service-learning program for Auburn University (AU) students in the Africana Studies Program. Outreach Global hopes to launch this program in 2024. Additionally, the team had a productive meeting with the U.S. Ambassador to Tanzania, Ambassador Michael A. Battle Sr., to discuss opportunities related to service-learning and capacity-building.

Following their visit to Tanzania, Dr. Cook and Dr. Quansah journeyed to Kigali, Rwanda, where they engaged with the nonprofit organizations, Rwanda Girls Initiative and the Rwanda Environment Awareness Organization. Outreach Global hopes to establish capacity-building training programs in collaboration with these two nonprofits.

While Outreach Global continues to share Auburn University with the world, it also works to share the world with the Auburn-Opelika community. The past couple months, the office has had the opportunity to participate in CEOE’s Auburn University Career Technical Academy (AUCTA), where they provided high school students with Global Communication Skills Training. Furthermore, in partnership with the AU College of Education, Outreach Global is set to offer the Fulbright in the Classroom program to more than 100 local high school students this November.
