Heart of the Holidays Facebook LIVE Special!
Well...last week was the first snow, and this week was the first Facebook LIVE special Heart of the Holidays, with Pat, Cheryl, and Shelly sharing their favorite holiday memories. They each brought a few items from their past holidays to help share their family traditions. Shelly made pumpkin bread from the recipe her mom always used and it was delicious (see below for recipe). Family traditions are an important part of the holiday season. The Best Pumpkin Bread EVER
On our Facebook LIVE Monday Heart of the Holidays, Shelly had made pumpkin bread using the recipe her mom always used. It WAS amazing, so we wanted to share it. While cookbooks have taken a backseat to Pinterest and the internet, there's nothing like opening a cookbook from a family member and making their recipes that you fondly remember. Interesting facts about the pumpkin -

The word pumpkin was first used in 1584, after French explorer Jacques Cartier explored the St. Lawrence region of North America, he reported finding “gros melons.” The name was translated into English as “pompions,” which has since evolved into the modern pumpkin.

The largest pumpkin pie ever made was over five feet in diameter and weighed over 350 pounds. It used 80 pounds of cooked pumpkin, 36 pounds of sugar, 12 dozen eggs and took six hours to bake.

More than 1.5 billion pounds of pumpkin are produced in the U.S. and 80 percent of this crop are picked within one single month of the year — October. The top-producing pumpkin states are Illinois, Indiana, Ohio, Pennsylvania and California. In fact, Morton, Ill., is the self-proclaimed “pumpkin capital” of the world because it’s home to the Libby’s corporation.

Esther's Pumpkin Bread
3 c. sugar
3 1/2 c. flour
4 eggs
2/3 c. water
1 (16 oz.) can pumpkin
1 tsp. pumpkin spice
1/2 tsp. salt
2 tsp. soda
1 c. oil

Sift all dry ingredients together, make a well in center. Add all other ingredients. Mix until smooth. Bake in greased and floured pans at 350. I have also put this in cupcake liners and made pumpkin muffins! The original recipe calls for 1 tsp. cinnamon and 1 tsp. nutmeg, I have always substituted 2 tsp of pumpkin pie spice.
The recipe was taken from the Polk County Food Service Association Cookbook published in the early 1970's.
