Resta Chardonnay


All stainless steel fermentation allows the true character of the chardonnay grape to shine. Crisp green apple with a mild buttery finish, this chardonnay is a gem of Italian chardonnays.

Spaghetti Carbonara
This is a quick, easy and delicious pasta recipe with less than 10 ingredients.  I can still remember the first time I had it at a friend's house in Austin about 25 years ago.  I was amazed at how quickly she put it together and with a nice salad and some bread it was the perfect meal.  Combine pancetta, or American bacon if you must, with pasta, eggs, garlic, and parmesan cheese and you have a classic Italian dish.  A key here is to mix the parmesan cheese with the eggs and toss it with the pasta very quickly so you don't get scrambled eggs.  Other than that it is foolproof and you guests will enjoy a dish that many would never believe how easy it is to prepare.  


Martin Ulisse Sangiovese


Made from 100% Sangiovese, the main varietal in Chianti, this Old World red is a true Italian classic. Medium bodied with solid tannins, this fruit forward wine is sexy yet rustic with dark fruits and berries. Pleasant acidity and a lingering finish allows this to be a solid table wine. Pairs well with pastas, Italian marinara, meat sauces, pork and red meat.

I love braising.  It takes a tough cut of meat and makes it tender, juicy and delicious.  When you braise meat on the bone it enhances the flavor even more.  Here I am going to braise short ribs with an Italian flair.  It is great served over a nice creamy polenta or even mashed potatoes.  Martin Ulisse Sangiovese is a great match for this dish, but any of our red wines will work just as well.
