FSA Food Show

 

I would like to thank Lori and FSA for taking care of our board meeting on short notice this month.  They were a little tired from their annual food show but made room for us.  I would also like to thank FSA for giving us a booth to represent our chapter at the food show.  This would not have been possible without the support of the chefs that gave their time to do demos and be at the booth answering questions and passing out brochures.  A special thank you to Gary and Elaine for setting up and managing the booth and John Fisher for his support.  A great job on demos from Matt and Chris on the FSA food stages. 

 

October Board Meeting

 

At the board meeting we discussed the creation of a WSCA food truck.  This truck will represent our chapter at community events and help support Chef and Child endeavors. Moneys from our building fund will be used to build this truck along with local sponsors that we are looking into now.

 

Annual Elections at November Holiday Meeting

 

Don't forget that we have our annual elections at our next meeting November 10th at the Marriott Sea-Tac.  This is also our annual silent auction for the apprenticeship so please bring something to add to the auction to help support the apprenticeship program.  Dan Lewark is the chairperson for the silent auction and Gary Fuller is the co-chair. AAC Dinner

The 44th annual American Academy of Chefs Dinner will be held Saturday, November 1st, 2014 at the Semiahmoo Resort in Blaine, WA.  Please click here to get more information for this spectacular event.  Chef Mark Linden is the contact for this. Korean Food Festival

 

WSCA is a sponsor of the 2014 Korean food festival held Friday October 31st at the Hyatt Regency Hotel, Bellevue.  The event runs from 1pm to 4pm Friday.  Please come and support their first annual event showcasing Korean food and culture.  Click here to view the flyer. January 2015 Board Meeting

 

Our next meeting in January will be a board meeting following the ice carving seminar at Rainier Golf and Country club on Saturday the 17th at 2pm. 

 

Presidents Awards Dinner

 

Our Presidents dinner will be held at Cedar Brook Lodge, 18525 36th Ave South Sea Tac, on February 9th. It promises to be a great dinner.

 

March 2015 Board Meeting

 

Our March board meeting will be held at Bates downtown campus.

 

Bite of Apprentice 2015

 

Our April dinner will be the Bite of Apprentice at RTC.

 

May 2015 Board Meeting

 

Our May board meeting will be at Le Cordon Bleu, Tukwila.

Don't miss our holiday dinner and silent auction. Also, annual elections will be held at this meeting. If you could bring some items for the auction that would be great! We are in need of gift cards, gift baskets, trips, hotel and casino packages, dinner gift certificates, and of course any culinary items. If you are able to procure a gift, please drop it off before the auction starts. We will be setting up at 4pm. The auction starts at 6pm during our reception and ends at 7pm.

2015 ICE CARVING 101

This educational seminar is available to Professional Chefs and Student Culinarians. This is a hands on approach to ice carving. Attendees will have the opportunity to use various equipment to grind, chisel and cut ice during this workshop.

2014 CHOCOLATE COMPETITION
  
The WSCA held the Salon Du Chocolat Competition on Saturday, September 27th, 2014, hosted by Le Cordon Bleu Seattle.
 
There was a Chocolate and Wine Tasting reception for spectators and competitors. Tae Tran was the grand prize winner receiving the trip to France.

The Salon Du Chocolat competition was a great success with about 70 people in attendance. Jennifer Sohonie from The Le Cordon Bleu College greatly welcomed our team. She was beyond helpful and was a tremendous support to us. We had very experienced Judges: Mark Pennington from Cacao Barry Canada, Tara Sedor, Executive Pastry Chef from Seattle Four Seasons, and Michel Lallaison, Pastry Chef from France. No travel or accommodation expenses for judges were spent on behalf of the Chefs Association. Because of the generous donations from our sponsors, we were able to save a few thousand dollars for the WSCA Scholarship Fund even with a budget of $7000 for prizes for the 6 winners.

The Wine and Chocolate Reception hosted by Washington State Wines from Bainbridge Island was very popular. Also, the amazing products from Two Snooty chefs were well received from the public.
