Greetings Culinarians and Associates,
ACF Re-accreditation for Apprenticeship Program
It has been a busy month getting ready for the ACF accreditation visit for our apprenticeship program. The site visit is over and I have not heard any news yet, but I know they were pleased with the direction of our program. I would like to thank Chef Jeff Pratt for his help in taking time off to escort the evaluators to three of our apprentice houses. Skyline, Blackbottle and Bellevue El Gaucho were the three locations chosen to tour. They were impressed with all three. Three entirely different styles of houses that our apprentices train at and we finished up at Blackbottle for a great tasting of many of their specialty plates. I would definitely recommend going there if you have not already tried them. Braised short rib is the best I have ever had. Thank you to all the chefs and apprentices at the houses that made themselves available for the evaluators during their visit. When I get the report I will share it with all of you.
Holiday Dinner & Silent Auction
Our next Dinner meeting is our annual Holiday dinner, silent auction and election at The Clearwater Casino Resort. Board meeting is 4-6pm. Reception and auction from 6-7pm followed by an incredible dinner. The elections will take place during our auction and dinner times. We are still looking for silent auction items to benefit our apprentice program. Please reach out to Chef Diana Prine at chefprine@hotmail.com. Please bring the gift items at 4:00pm if possible, but no later than 5:30. If you cannot come to the event please reach out to Diana or myself to get the donations to the event. All proceeds from this auction go towards the apprenticeship.

Wine & Cheese Educational Seminar
We will be having a wine and cheese educational seminar at Renton Technical College on January 20th, 2018. There will be a nominal cost for this seminar. Chef Brandon LaVielle is organizing this seminar and will be sending out information soon. There is limited space for the wine and cheese class so the first 50 people that sign up will be admitted.
Culinary Salon Competition
We are having a culinary salon in May of 2018. It will be held at the Art Institute in Seattle. It will be a one day competition this year and more information will come out soon from our new competition chair, Chef Tamas Ronyai and his co-chair, Chef Janet Waters.
I know we are fast approaching the holiday season in our businesses and will be all very busy, but I hope that we take the time to enjoy some of the holidays for ourselves as well. Peace.
