Mother's Day Brunch Recipes!

This extraordinary time when we are holding all our loved ones a little closer in our hearts is the perfect time to take a special day to celebrate our moms. These easy and delicious cocktail and strata recipes are guaranteed mood-brightening treats!

Lemon Raspberry Bellini

4 tbsp lemon sorbet
2 tsp Raspberry Balsamic Vinegar
8 oz rosé champagne
raspberries

Combine the sorbet and balsamic vinegar
in a cocktail shaker and shake vigorously.
Add the champagne and stir gently.
Pour into chilled champagne flutes and
Garnish with raspberries. 

Mango Honey Ginger Mimosa

6 tbsp mango nectar, chilled
8 oz champagne, chilled
2 tsp Honey Ginger Balsamic Vinegar
lime peel twists

Divide the passion fruit nectar between two champagne flutes.
Slowly pour champagne into the flutes.
Add 1 tsp balsamic vinegar to each and stir very gently.
Garnish with a festive lime peel twist.

Raspberry Lemon Strata

2 tbsp Lemon Olive Oil
1/2 cup maple syrup
2 tbsp Raspberry Balsamic Vinegar
6 cups french bread cubes
1 pint fresh raspberries
8 oz cream cheese …cut into small chunks
10 large eggs
1 1/2 cups milk
2 tsp lemon zest
1/4 tsp sea salt

Preheat the oven to 350°F.
Generously oil a 9” x 13” glass baking dish
Pour the maple syrup and balsamic vinegar into the dish.
Add the bread cubes, raspberries and cream cheese and toss gently until well coated.
Whisk the eggs, milk, lemon zest and salt together in a large bowl until well mixed.
Pour over bread cubes.
Set aside for 10 minutes so everything can soak together and mingle.
Bake the strata for 45 minutes…until puffed and gloriously, deliciously golden.
Cool 5 minutes and serve warm with additional maple syrup.

Bagel and Lox Strata

2 tbsp Wild Dill Olive Oil
8 plain bagels, torn into bite-sized pieces
8 oz cream cheese, cut into 1/2” cubes
6 oz smoked salmon, cut into small pieces
1/4 cup red onion, diced
10 eggs
1 1/2 cups milk
4 tbsp dill, minced

Brush a 9” x 13” baking dish generously with olive oil.
Arrange half of the bagel pieces in the prepared baking dish.
Top with the cream cheese chunks, salmon and red onion.
Arrange the remaining bagel pieces over salmon mixture.
Whisk the eggs and milk together in a medium bowl until well combined.
Pour the egg mixture over the ingredients in the baking dish.
Press down lightly on the bagels so they absorb the liquid.
Sprinkle the dill over the top…cover with plastic wrap and refrigerate overnight.
Preheat the oven to 350°F.
Bake until the eggs are nearly set…about 35-40 minutes.
Let stand for 10 minutes before serving.
