HOLIDAY ENTERTAINING!

Here are some ideas for making this holidays season extra special. Remember, Thanksgiving was about a week later than last year, so less time to get ready for Christmas and Chanukah, which also starts Dec. 25th.

HOLIDAY ENTERTAINING IDEAS

Christmas Eve and New Years Eve are our busiest days of the year -- and we do sell out of some of your favorites, so we require that you call in an order before end of business on Friday Dec. 20th. For trays you have until end of business on 12/19.

IF YOU HAVE A FRESH FISH ORDER FOR PICK UP ON THE 24TH, PLEASE COME IN THE AFTERNOON! DELIVERY FROM SUPPLIERS NOT UNTIL NOON.

If there's something from the deli that you want in a large quantity, like a dozen Salmon Cozies or 15 Papillotes, we strongly recommend that you order well ahead - we will need to know in advance how much staff we will need to make everything.

For whatever you desire, the earlier you order, the more likely that we can get everything you want. There are shortages of some items every year, so get those orders in!

Here are some great ideas for making entertaining easy and delicious:

CHRISTMAS EVE DINNER: 

Most cooks are also the person wrapping the presents - don't try to do everything, let us do most of the cooking! 

• Salmon Papillotes - a gift-wrapped delight with fresh salmon & vegetables in parchment. Just pop in the oven! Choose from Provencal or Roasted Ratatouille.
• Salmon Cozy (pictured) - fresh salmon wrapped in puff pastry with fresh dill and baby spinach. Ready to bake and serve with our Lemon Dill Sauce, included. Add a salad and our Herb Roasted Potatoes.
• Stuffed Salmon or Tilapia Fillets - chose from Blue Crab, Shrimp & Caper, or Spinach & Mushroom stuffing - we make them with fresh salmon, if you want them made with tilapia, please call and place an order and we'll do them just for you. 
• Crab Cakes - one as a first course, two for a main course, these are easy to saute and serve, and everybody likes them! Comes with our Stone Ground Mustard Sauce. Add some of our Fresh Coleslaw or Broccoli Salad to complete the meal.
• Fresh Fillets of your Favorite Fish - we'll have two or three types of salmon, rainbow trout, sea bass, snapper, whitefish, lake perch, sole and more. Want something really special like Dover Sole? CALL AT LEAST 5 DAYS AHEAD AND WE CAN ALMOST CERTAINLY GET IT FOR YOU. EARLIER THE BETTER.
• Your Favorite Shellfish - fresh, dry packed sea scallops, shell-on wild and raised shrimp, frozen raw shrimp (peeled and de-veined), frozen cold and warm water lobster tails, frozen snow and king crab legs, fresh stone crab claws, clams, oysters -- the delights of the sea. LIVE LOBSTERS MUST BE ORDERED AT LEAST 24 HOURS IN ADVANCE OF PICK UP!!  48 hours is better.
• Fresh Mussels - delicious and easy, we have several simple recipes on our web site - CLICK HERE for some great recipes - just add some crusty bread and a salad. A Burhop tradition for Christmas Eve.
• Burhop's Entree Soups - All of our chowders as well as our award-winning Seafood Chili, Shrimp Gumbo and Shrimp Etouffee make a great, easy to heat and serve casual dinner for hungry friends and relatives.

CHRISTMAS DAY ENTERTAINING

• Burhop's Cocktail Shrimp - always freshly cooked with our special blend of spices, always the first bowl to empty at a party.  Don't forget the sauce!
• Burhop's Fresh Spreads - made in Burhop's kitchen these are an economical way to appease a hungry crowd - choose from Shrimp, Smoked Salmon, Smoked Whitefish and Crab-blend. Just add crackers! 
• Oysters on the half shell - we generally have blue points, and will also have some raspberries and malpecs for the holidays, but they sell out fast - if you want some for Christmas, please call ahead and avoid disappointment! We will show you how to open them, or you can watch our oyster opening video through the link below. 
• Hot and Cold Smoked Salmon - we have a great selection of cold smoked salmon from Ducktrap in Maine, plus our custom smoked salmon (plain, peppered and Cajun) done locally just for us. 
• Shrimp, Lobster, Mushroom or Butternut Squash Bisque - an elegant first course, our tasty bisques are made in Burhop's kitchen every week. We fill the freezer and they fly out the door, one of our most popular soup items. Treat your dinner guests to a hot cup of bisque!

STONE CRAB SEASON IS HERE!

Though Florida is still cleaning up from two hurricanes, boats are out catching stone crabs - the only shellfish where the creature gets to live. With two claws, one larger than the other, the larger claw is harvested, and the crab is returned to the ocean to grow a new one. Supply is currently very limited - if you want some, call and place an order, 630-887-4700.

A fisherman favorite, great pan fried (like shore lunch) or baked in the oven, or grill using a grill topper. Mild and flaky, wonderful breaded or brushed with one of our fresh pestos. About as local as we can get!

NORTH ROAD SCOTTISH SALMON

Once a major trading route for Scotland and the Scandanavian countries, this area of the North Sea is now home to one of the worlds finest salmon farming operations. RUBY RED RAINBOW TROUT

This is our favorite fish for baking or sauteing with a nut crust. Good with pecans, almonds, pistachios, macadamia nuts. Choose your favorite, chop in a blender or processor, rub fish with a little olive oil, press on a layer of nuts. It's super easy, and so delicous! Because so many of our customers have asked if they could get their seafood entrees already cooked, we've decided to offer many of your favorites ready to eat. Pre-orders are required, so we can have it hot and ready for you when you get here to pick it up. What could be better! Tell us what you want! When the season starts, we may do soft shell sandwiches - yummy!

   In late June we catered a fun event for a family in Wilmette - a combined 40th and 5th birthday party, father and son. Another father and son duo, Burhop's Chef Jaime and his son Jonny, cooked up kebabs, lobster tails, sweet corn and more for a happy crowd of many ages. According to the hostess: 

"An AMAZING feast thanks to you, John and Jamie. The food was amazing and the chefs could not have been nicer. Everyone was raving and we certainly let them know who to call!  Thank you again, you have very satisfied customers." 

We have done an oyster bar for a parties in Hinsdale, and a lobster tail birthday party in Kenilworth. 

And during Covid we did a socially distanced wedding reception with individual lobster boil dinners.

We've done lobster boils from Hinsdale to Highland Park, for 6 to over 30.
