IDEAS FOR
HOLIDAY ENTERTAINING!
Here are some ideas for making this holidays season extra special. Remember, Thanksgiving was about a week later than last year, so less time to get ready for Christmas and Chanukah, which also starts Dec. 25th.
HOLIDAY ENTERTAINING IDEAS
Christmas Eve and New Years Eve are our busiest days of the year -- and we do sell out of some of your favorites, so we require that you call in an order before end of business on Friday Dec. 20th. For trays you have until end of business on 12/19.
IF YOU HAVE A FRESH FISH ORDER FOR PICK UP ON THE 24TH, PLEASE COME IN THE AFTERNOON! DELIVERY FROM SUPPLIERS NOT UNTIL NOON.

If there's something from the deli that you want in a large quantity, like a dozen Salmon Cozies or 15 Papillotes, we strongly recommend that you order well ahead - we will need to know in advance how much staff we will need to make everything.
For whatever you desire, the earlier you order, the more likely that we can get everything you want. There are shortages of some items every year, so get those orders in!

CHRISTMAS EVE DINNER:
Most cooks are also the person wrapping the presents - don't try to do everything, let us do most of the cooking!

Salmon Papillotes - a gift-wrapped delight with fresh salmon & vegetables in parchment. Just pop in the oven! Choose from Provencal or Roasted Ratatouille.

Salmon Cozy (pictured) - fresh salmon wrapped in puff pastry with fresh dill and baby spinach. Ready to bake and serve with our Lemon Dill Sauce, included. Add a salad and our Herb Roasted Potatoes.
- Stuffed Salmon or Tilapia Fillets - chose from Blue Crab, Shrimp & Caper, or Spinach & Mushroom stuffing - we make them with fresh salmon, if you want them made with tilapia, please call and place an order and we'll do them just for you.

Your Favorite Shellfish - fresh, dry packed sea scallops, shell-on wild and raised shrimp, frozen raw shrimp (peeled and de-veined), frozen cold and warm water lobster tails, frozen snow and king crab legs, fresh stone crab claws, clams, oysters -- the delights of the sea. - Hot and Cold Smoked Salmon - we have a great selection of cold smoked salmon from Ducktrap in Maine, plus our custom smoked salmon (plain, peppered and Cajun) done locally just for us.
- Shrimp, Lobster, Mushroom or Butternut Squash Bisque - an elegant first course, our tasty bisques are made in Burhop's kitchen every week. We fill the freezer and they fly out the door, one of our most popular soup items. Treat your dinner guests to a hot cup of bisque!

STONE CRAB SEASON IS HERE!
Though Florida is still cleaning up from two hurricanes, boats are out catching stone crabs - the only shellfish where the creature gets to live. With two claws, one larger than the other, the larger claw is harvested, and the crab is returned to the ocean to grow a new one. Supply is currently very limited - if you want some, call and place an order, 630-887-4700.

This is our favorite fish for baking or sauteing with a nut crust. Good with pecans, almonds, pistachios, macadamia nuts. In late June we catered a fun event for a family in Wilmette - a combined 40th and 5th birthday party, father and son. Another father and son duo, Burhop's Chef Jaime and his son Jonny, cooked up kebabs, lobster tails, sweet corn and more for a happy crowd of many ages. According to the hostess:
"An AMAZING feast thanks to you, John and Jamie. The food was amazing and the chefs could not have been nicer. Everyone was raving and we certainly let them know who to call! Thank you again, you have very satisfied customers."

We have done an oyster bar for a parties in Hinsdale, and a lobster tail birthday party in Kenilworth.
And during Covid we did a socially distanced wedding reception with individual lobster boil dinners.
We've done lobster boils from Hinsdale to Highland Park, for 6 to over 30.
