Dear Friends:

Lots of changes are coming to our corner of North Georgia. The Old Clayton Inn just sold to an investment group planning to make it a resort hotel, more restaurants are opening on Main Street in Clayton, Julep Farms is developing 22 Acres in Dillard,  Old Edwards Inn recently purchased the York House Inn, and rents are going up everywhere. For better or worse a lot of things are happening and it is pretty exciting. At a recent city council meeting the mayor asked our opinion about the planed investment for the Old Clayton Inn. Gayle and I agreed we are cautiously optimistic. To fill their rooms they will need to spend a huge amount of money to promote our area and that property. This investment benefits every tourism related business, but it will change our small town dramatically. We are about to get bigger. 

Gayle and I came here 20 years ago and during these years have made a huge investment in our property. We have tried to partner with our community to make our corner of North Georgia better not worse.  We hope these newcomers will think, communicate and cooperate as partners and make everything even better still. Big Changes Coming - Old Clayton Inn to be Re-Purposed as Luxury Resort Hotel
The Old Clayton Inn, empty for many years, was recently purchased by Everest Investments, led by Henk Evers. He was the former principle of  Chateau Elan. 

Their planned  approach would be to add two floors to the top of the building and also have a roof-top deck lounge. The property would also include a  pool, water fall, courtyard, spa and dining on the ground level. 70 guest rooms are planned and lots of meeting space. The Investment group is also purchasing other nearby properties to ensure adequate parking and additional meeting space. Caramel Shards
Gayle has adapted her recipe from America's Test Kitchen and it is a gem. She makes this tart fresh each time it is on our menu. And even after a multi-course meal seldom but a couple crumbs come back. This recipe has multiple steps but it is worth the effort.  David often makes the caramel shards, freeing Gayle to concentrate on the chocolate. It makes a beautiful presentation. 
Apr 26 - 28: 2019 Georgia Bigfoot Conference
The First Annual Georgia Bigfoot Conference  and North Georgia Comicon  will be held at the  Rabun County Civic Center  in Clayton, GA. Long the curator of many Bigfoot reports, the Conference explores sightings, Bigfoot tracking techniques, and new research in the general area of cryptozoology.
