Pork Tenderloin with Roasted Mixed
Vegetables and Mac & Cheese

Ingredients:

- 1.8 lb. Pork Tenderloin*
- 1 lb. Mixed Vegetables (frozen)*
- 1 Macaroni & Cheese (7.25 oz.)*
- 2 tbsp. olive oil
- 1 tsp. garlic powder
- 1 tbsp. butter
- Salt and pepper (to taste)
- 1/4 c. milk

Directions:
- Preheat your oven to 400°F.
- Pat the pork tenderloin dry with paper towels, rub with olive oil, salt, pepper, garlic powder.
- Place the pork tenderloin on a baking sheet lined with parchment paper or in a roasting pan.
- Toss the mixed vegetables in olive oil, salt, and pepper. Spread them around the pork tenderloin on the baking sheet or in the roasting pan.
- Roast in the preheated oven for 25-30 minutes or until the pork reaches an internal temperature of 145°F. The vegetables should be tender and slightly caramelized.
- While the pork and veggies are roasting, cook the macaroni from the box according to the package instructions.
- Once the pasta is cooked, drain it and set it aside. In the same pot, follow the instructions on the box to prepare the cheese sauce.
