A Couple of delicious things you can do with your leftover Corned Beef:
SPICY REUBEN SANDWICH
In a small mixing bowl, combine mayo, ketchup and Irish cream style horseradish until evenly incorporated. Set aside. Using a bread knife, slice your
Rêver Artisan Bakery Irish Soda Bread buns in half lengthwise, and grill using Kerrygold pure Irish butter. Assemble your Reuben by spreading your homemade sauce (or Russian dressing) on both halves of the bun, then add corned beef, Swiss cheese and finally sauerkraut (drained).
CORNED BEEF HASH
Sauté some onions in Kerrygold pure Irish butter, add chopped boiled Yukon Gold potatoes and chopped cooked corned beef. Do not stir the potatoes and corned beef, but let them sizzle until brown. Use a spatula to peek underneath and see if they are browning. If nicely browned, use the spatula to flip sections over in the pan so that they brown on the other side. Finish by adding chopped parsley, add plenty of freshly ground black pepper and salt to taste.
