Kielbasa & Pierogies Skillet with Sautéed Vegetables

Ingredients:

- 1 package kielbasa sausage, sliced*
- 13 oz. pierogies*
- 12 oz. cheddar cheese, shredded*
- 1 small onion, sliced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 tbsp. olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley (for garnish)

Directions:
- Heat olive oil in a large skillet over medium heat. Add sliced onion and bell pepper, sauté until softened, about 3-4 minutes.
- Add zucchini and cook for an additional 2-3 minutes until tender.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add the sliced kielbasa and cook until browned on both sides.
- In the same skillet, add the pierogies and cook according to package instructions, stirring occasionally until heated through and lightly golden.
- Sprinkle shredded cheddar cheese on top, cover, and let it melt for 2-3 minutes.
- Season with salt and pepper to taste, garnish with fresh parsley, and serve hot!
