Out of the Fire Connection

Winter 2024

FEDERAL BREW

We have always focused on supporting small, mostly local and like minded businesses such as ourselves. It is important to us, for many reasons, but the relationship piece is the most gratifying. We have been offering Kombucha on tap from our friends at Federal Brewing for several years. We appreciate and respect the attention to detail and integrity that they pay to the brewing of their living beverage!

Fed Brew was founded in 2013 by a Board Certified Nutritional Health Coach and a Mechanical Engineer & USMC Veteran. They spent the last few years perfecting their product and building a zero waste brewery. The brewery headquarters is located in a magnificent historic former bank building in Federalsburg, Maryland, the home of movers and makers. Situated next to the Marshyhope Creek, with a free canoe and kayak launch, a fishing pier and a walking trail, they are looking forward to opening their doors to the public and promoting a healthy lifestyle within the community.

Our Mushroom Fairies

Bianca and Jose Prieto-Figueroa own and operate a business called The Bay Mushrooms. They have been involved in agriculture since 1996. After finishing their Master's degrees, they moved to Maryland and started growing mushrooms and vegetables for friends and family. After many years of hard work, they are proud to directly offer high-quality, unique products to their community from the heart of the eastern shore of Maryland. They put lots of love and careful attention to each item. The Bay Mushrooms specialize in a diverse range of varieties, including Shiitake, Oyster, Lion’s Mane, King Oysters, Maitake, and Chestnut. Each mushroom is grown meticulously in their unique climate control facilities, ensuring exceptional flavor and quality.

Bianca and Jose faithfully deliver their shiitake, Maitake, and Oyster Mushrooms to us every week. They also deliver their positive attitude and good cheer when they arrive. Sometimes they bring their next generation mushroom munchkins Francisco and Lucas!

You will find their shiitake mushrooms in our smoked shiitake relish on the Duroc Pork Chop. Their Maitake mushrooms are on our mushroom pizza and they have a shining presence, crisped to perfection on the Surryano Ham appetizer with smoked chimichurri. Their mushrooms are offered on the market as well as included in our specials from time to time.

Ginger and its Versatility

Ginger is a spice that comes from the rhizome (or root) of the flowering plant Zingiber officinale. It is native to countries in Asia. Asarum canadense, wild ginger, is found throughout the eastern half of the United States. It grows in rich mesic soils in shady deciduous forests. Ginger can also be cultivated in the United States. Hawaii is the only US state that can grow ginger commercially. Ginger may also contain beneficial components, including gingerols and shogaols. These compounds are thought to have antioxidant and anti-inflammatory properties. Research has shown that ginger can have some health benefits, including for digestion, heart health, and menstrual pain.

Because of its versatility, ginger finds its way into both savory and sweet culinary creations. Jed our Sous Chef makes a fresh pressed ginger syrup that we use in our house made ginger soda. The ginger syrup is also the secret ingredient in our Sangria and Sansgria recipes. Jed makes a limited batch seasonal gingersnap ice cream by the pint, hit the link below to order before it is sold out. The ginger simple syrup is also available in a 375 ml bottle.

Our Garden

Eric Wittman is the steward, creator and inspiration of the Out of the Fire garden. He has the good fortune (as do we) to enjoy the creativity that Kaitlyn Waldrip brings to the whimsy of our garden oasis. Since winter is upon us and the holiday cheer is in full bloom, Eric and Kaitlyn have made us the stewards of a life-sized Nutcracker. We have christened him Nutthaniel. We didn’t actually hit him with a bottle of champagne to complete the ritual, but we did pull his beard to ascertain whether it was real! We also have a hybrid chipmunk/squirriel that is perching above the side door. We haven’t decided whether it is a squirrelmunk or a chipsquirrel.

In addition, they also placed some beautiful white pansies, seasonal greens and a light exhibit at the end of the brick walk by the back porch. Feel free to walk the brick pathway to see all the wonderful work that Eric and Kaitlin have put into making it the garden paradise that we are fortunate to admire every day.
