This week we want to shoutout our vendors who have been making strides in taking their craft, pairing up, and making some unique flavor collaborations. At the market, we believe in the ethos that using our shared skills to make even tastier local products is better for our community. A true taste of community creativity. A deeper palate of the area, if you will. It's what gives the market and our local food scene some extra sparkle, not to mention some good happy feelies.
Some fantastic market collaborations we've seen:

High Point Kombucha and Blue Sun Growers: Oxymel made using their spicy Cumulus kombucha with added honey and herbs and let ferment for a few weeks. This resulted in an absolutely tantalizing oxymel!

Easton Salsa Co. and Scholl Orchards: Fermenting the habanero peppers from Scholl Orchards, Art aged his hot chocolate hot sauce in a 5 gallon oak bourbon barrel for a year!

Dragonfly Hill Farm and Oley Ravioli: Paired up to create TWO fantastic recipe for ravioli with garlic (see one below) - a match made in heaven!

(Stir-fried Carrot & Burdock Root)

Ingredients
-
3 or 4 gobo (burdock roots), or about 4 cups cut into 2 inch pieces - You can find burdock at the Highmark Farmstand inside the Easton Public Market!
- 1 carrot, 1/2 cup cut into 2 inch pieces
- 1 1/2 tablespoons Asian style sesame oil
- 2 tablespoons sugar
- 1/8 teaspoon shichimi togarashi (seven-spice mixture) or cayenne pepper
- 1/4 cup soy sauce
- Toasted white sesame seeds for garnish
Directions
- Cut the carrot and gobo into matchstick size pieces. Soak them in a large non-reactive bowl of cold water for about 20 minutes. Drain. Remove the excess water by wrapping the carrot and gobo into a clean dish towel. Press out as much water as possible.
- Heat the oil in a wok or large heavy skillet, medium-high heat, and then stir-fry the gobo and carrot for 5 to 8 minutes.
- Add the sugar, shichimi-togarashi or cayenne and mix well. Then add the soy sauce and stir-fry until the liquid is absorbed.
- Sprinkle with sesame seeds before serving. Can be served warm or at room temperature.

Happy CSA Week! Cabbage Throw Farm will be at the Easton Farmers Market for one last weekend this winter.
Sign up for your 2025 CSA Memberships in person and enjoy some of the last storage crops before the start up of the season in May. Memberships will be available by email throughout the rest of winter. More information about the CSA program can be found online.

Salvaterra's is bringing the not-so-basics. Thanks to their dedication to year-round fresh produce, we can still have the crunch of kale and radish in the winter.
They'll be bringing: spinach, spring mix, baby chard, baby kale, mizuna, tatsoi, red cabbage, green cabbage, pak choy, tuscan kale, green kale, scallions, red and yellow onions, red and yellow potatoes, butternut squash, radishes, turnips, beets, carrots, and watermelon radishes!
