Have you hiked to Heather Lake? Located off of the Mountain Loop Highway, this outstanding trail has been one of my all-time favorites! For several years, the challenge in visiting Heather Lake was actually the gravel road you have to take to get to the trailhead. The potholes used to be so big, they would swallow cars and after 2 flat tires on this road, I decided I may never go back. Until I learned that the road had been repaired and the potholes were filled, making the trailhead comfortable and accessible again. So, of course, I had to go check it out and I was so glad I did!! I picked my mom up on the way and we had an amazing time exploring all of the beauty that this trail offers. One of our favorite parts was the boardwalk that wraps around the lake - offering incredible views from many different perspectives. The sun was shining bright and the water at Heather Lake was so crystal clear, you could see the bottom!! And to top it off, this hike was my halfway milestone to completing 52 hikes this year!

Fruit on a taco? Yes please! One of my favorite ways to eat jackfruit is in a taco... and this week, that is exactly what I enjoyed at Cactus in Kirkland! The tacos are made with Spicy jackfruit tinga, avocado, red onion escabeche, and cilantro - served with rice and beans of course! Cactus is an amazing Restaurant that has 6 locations throughout the Pacific Northwest! If you are looking for great food, amazing service, and awesome drinks - check out a Cactus near you!
