It's rare that I get the chance to explore a trail that I have never been on and this week was one of those times! Mount Catherine is a short but steep hike that is located near Snoqualmie Pass and is absolutely amazing! The trail is well groomed and the leaves were just starting to change colors!! As I got to the summit, the clouds began to roll in and the views slowly disappeared. Although it was a moody day in the mountains, I loved every second of it, and I'm excited to come back here again next year... but on a clear day!

If you are looking for a pizza that sparks joy, this is it! Spark Pizza in Redmond is one of the top 50 pizza places in the US and is seriously delicious. I went out to dinner with some friends and I can't believe it was my first time visiting! I was blown away by the food, beverages, and service and loved how they had several vegan options. We dined outside on their fun patio and enjoyed a pizza called "Buffy the Vegetarian Slayer" - which they prepared vegan for us with plant-based cheese! We also had the PNW salad (not pictured) and it was amazing as well! I will definitely be coming back here again soon!
