I can't believe it was my first time hiking the Middle Fork Snoqualmie River Trail! I was researching places to explore with my Mom and came across this amazing hike nestled in the Cascade Mountains. Driving on the road to the trailhead is unreal and it goes for miles. The trail itself offers a serene escape with its lush mossy forests, a meandering river, and breathtaking snow-capped mountain views. We stopped several times to take photos and had so much fun spending quality time together! If you want to go on a beautiful drive to an incredible hike along a PNW river, this is it!

This week, I enjoyed the Vegan Veggie and Hummus Sandwich which had sauteed zucchini, mushrooms, red peppers, onions, vegan mayo, and mixed greens - plus it came with a fresh side salad!
