With sustainability in mind, William Gonzalez and Allison Slater founded DishKitchen, a meal-prep service that provides healthy and delicious foods. Their weekly menu consists of golden and juicy Hunan beef, rich and savory vegetable stir fry, and brown rice. There's also seared salmon, succulent broccoli rabe and a caramelized onion side, and luscious roast potatoes. Stop by DishKitchen's stand this Saturday for even more options; all meals are balanced and easy to warm up. And they're sold in 100% compostable material!!

Morris County Allergy-Free Food Drive
|
After learning many people struggled to find allergen-free foods during the pandemic, Chatham High School student, Andrew Furst, started Morris County Allergy-Free Food Drive. Furst's food drive provides safe food options for families in need through collecting monetary and food-based donations. All items are sent and distributed at the Morris County Interfaith Pantry. Please consider donating at his stand this weekend, located right next to the Chatham Borough tent!

Vendor Feature - Oldwick Soup Company

It is soup galore at the Oldwick Soup Company! Owned and operated by Mary Ann (COO) and Bob Hiller (COO), Oldwick Soup is a small, female-owned, family business located in North Central, New Jersey. Bob Hiller graduated from the Culinary Institute of America and has worked in the food industry for about 25 years. Before developing their company, Bob and Mary Ann were Senior Partners and owners of the Imagineer Group, an Agency of Record for various national and regional clients.
In 2017, the Oldwick Soup Company was formed, boasting an array of seasonal and fresh soups, utilizing ingredients from local farms and businesses. The Hiller's are committed to producing high-quality (and delicious) soups, offering a wide selection for all of their customers; their menu includes vegan, vegetarian, gluten-free, and dairy-free soups!

Fear not, their soups are not only for the winter months; their menu overflows in light and refreshing summer flavors. In honor of Peach Month, try their Peach Gazpacho (using peaches from Alstead Farms), a cold, luscious soup perfect on a warm summer day. New this week is the Minted Garden Sweet Pea Soup using minimal ingredients; the soup perfectly combines a smooth puree with rich, heavy cream and is delicious. Get this soup soon as they make it once or twice a season!
If you prefer warm soups, Oldwick has it! Their Summer Split Pea Soup features yellow split peas perfectly mixed with spicy sausage, creating vibrant and delectable flavors. Next is the Coconut Red Lentil Soup; similar to an Indian Dal, it is a unique take on a lentil soup, a little spicy, and a perfect canvas to add your favorite additions. It is also Chef Bob's favorite!

BLACKBERRIES - 5 FACTS:
- The dark-blue color on a blackberry means they have high antioxidant levels; they are a good source of amino acids, dietary fiber, and do not contain harmful cholesterol.
- Blackberries have many names, including: brambleberries, bramble, dewberries, thimbleberries, and lawers.
- The leaves of black berries can treat mild inflammation of the gums, sore throats, and can also be enjoyed in a cup of tea or therapeutic drink.
- The first modern blackberry variety development happened in the United States, starting with Judge Logan of California in 1880, and the introduction of the Loganberry.
- Folklore in the UK states that blackberries should not be picked after Old Michaelmas Day (October 11) as the devil has made them unfit for consumption. There is some truth in this as the wet and cool weather in Autumn often causes the fruit to become infected with mold.

CINNAMON MAPLE BROWN BUTTER BLACKBERRY PEACH CRISP
Ingredients
Filling:
- 4-5 peaches, sliced
- 3 cups fresh blackberries
- 1/2 cup brown sugar
- 1 tbsp. + 1-2 tsp. cornstarch
- 1 tbsp. vanilla extract
Topping
- 1 cup all purpose flour
- 1/2 cup old fashion oats
- 1/2 cup brown sugar
- 1 tsp. cinnamon
- 12 tbsp. (1 1/2 sticks) cold salted butter, cubed
- 4 tbsp. maple syrup
Instructions
- Preheat the oven to 350° F
- In a large bowl, mix the peaches, blackberries, brown sugar, cornstarch and vanilla together. Spread the fruit onto a 10-12 inch. baking dish or cast iron skillet.
- For the topping, combine oats, flour, brown sugar, and 1/2 tsp. cinnamon. Then, add 8 tbsp. of butter, cutting it into the dry ingredients using a fork or pastry cutter. Sprinkle the fruit on top, cover with aluminum foil, and bake for 30 minutes.
- While baking, in another pot, add 4 tbsp. of butter and set over medium heat. Let the butter brown lightly until it smells toasted (about 2-3 minutes). Remove from the heat and whisk in maple syrup, 1/2 tsp. cinnamon and a pinch of salt.
- Remove the crisp from the oven (after 30 minutes or until golden brown), take off the foil, and drizzle the maple butter over.
- Bake uncovered for 25 to 30 minutes.
- Allow to cool slightly and serve with ice cream.
