Champagne Philipponnat
'Réserve Perpétuelle' Brut NV
Champagne • France
$80 retail

An expressive, layered Champagne that captures the heart of Philipponnat’s style: richness balanced by precision and freshness. Built around a perpetual reserve begun decades ago, each new release blends wines from the latest harvest with older reserve wines, creating depth without sacrificing vitality.
Varietals & Vinification:
A blend of 65% Pinot Noir, 32% Chardonnay, and 3% Pinot Meunier, primarily from premier and grand cru vineyards around Mareuil-sur-Ay. The first press is vinified traditionally in vats and wooden barrels to avoid oxidation, with a portion kept without malolactic fermentation to preserve tension. Roughly one-third of the cuvée consists of older wines aged in wood, refreshed annually and aged on the lees for a minimum of three years. Finished with a moderate dosage of 8 g/L for balance and purity.
Tasting Notes:
Deep gold in color with fine, persistent bubbles. Aromas of vine blossom, citrus, lightly toasted bread, and hints of honey lead to a generous palate of redcurrant, raspberry, ripe grape, and subtle biscuit tones. Full-bodied yet lifted, with a long, savory, bread-crust finish. Beautiful as an aperitif, and outstanding with poultry, white meats, seafood, and fine charcuterie.

Champagne Philipponnat
'Réserve Perpétuelle' Non-Dosé NV
Champagne • France
$80 retail

A pure, unadorned expression of Philipponnat’s perpetual-reserve philosophy. Crafted from the same solera-style base as the Brut version, the Non-Dosé is bottled without any added sugar, allowing the wine’s minerality, precision, and natural vinosity to shine through. It’s Champagne at its most transparent and gastronomic.
Varietals & Vinification:
A blend of 66% Pinot Noir, 32% Chardonnay, and 2% Meunier, sourced primarily from premier and grand cru vineyards around Mareuil-sur-Ay. The first press is vinified in vats and wooden barrels to protect freshness, with a portion of the 2021 harvest vinified without malolactic fermentation to preserve lively tension. More than half of the blend comes from older reserve wines aged in wood, then aged on lees for a minimum of three years before release. Bottled with 0 g/L dosage to preserve purity and character.
Tasting Notes:
Pale gold with fine, persistent bubbles. Aromas of lime blossom, vine flower, and hawthorn lead into a palate that is clean, linear, and precise. Citrus, green apple, and subtle bread-crust notes are framed by vibrant but gentle acidity, finishing long, clear, and refreshingly saline. Exceptional with raw fish, oysters, sushi, and delicately prepared seafood - or as a crisp, elevated aperitif.

Champagne Philipponnat
Rosé Brut NV
Champagne • France
$125 retail

A refined, food-friendly rosé that balances freshness, elegance, and depth. Built from the same base wines as the Réserve Perpétuelle cuvées, the rosé gains its delicate color and expressive fruit from a carefully judged addition of saignée and still Pinot Noir from top vineyards. The result is fragrant, textural, and quietly luxurious.
Varietals & Vinification:
A blend of 68% Pinot Noir, 30% Chardonnay, and 2% Meunier, primarily first-press fruit from premier and grand cru sites. A portion is vinified in wood to build texture, and part of the 2021 harvest is kept without malolactic fermentation to preserve lift. Still red wine and rosé de saignée from Mareuil-sur-Ay and Les Riceys make up 7–8% of the final blend, adding color and red-berry depth. Aged three to four years on lees and finished with a moderate 9 g/L dosage for balance.
Tasting Notes:
A beautiful salmon-pink color with fine, creamy bubbles. Aromas of cherries, wild strawberries, and hints of citrus peel lead into a palate that is elegant, pure, and fruit-driven. Polished acidity and a gentle, savory astringency carry the finish, making this rosé both refreshing and wonderfully versatile at the table. A natural match for smoked fish, charcuterie, pink meats like veal or lamb, and berry-driven desserts - or simply as a celebratory aperitif.

*EXTRA POUR*
Champagne Philipponnat
Blancs de Noirs Extra-Brut 2019
Champagne • France
$150 retail

A powerful yet beautifully poised vintage Champagne crafted entirely from Pinot Noir. Sourced from premier and grand cru vineyards, this Blanc de Noirs shows the intensity, depth, and elegance that Philipponnat coaxes from the grape: concentrated fruit layered with savory nuance, shaped by patience and long lees aging.
Varietals & Vinification:
100% Pinot Noir from top parcels in the Montagne de Reims and the estate’s vineyards in Mareuil-sur-Ay, Avenay, and Ay... using only the first press. Traditional vinification preserves freshness, with no malolactic fermentation for a significant portion of the wine to maintain structure and tension. The cuvée ages five to six years on its lees, then receives an Extra-Brut dosage (4.25 g/L) to keep the profile dry, precise, and terroir-driven.
Tasting Notes:
Rich golden color with subtle pink glints. Aromas open with violet and acacia blossom before unfolding into apricot, strawberry, and morello cherry. On the palate, the attack is full and mouth-coating, with wild berry fruit, followed by a long, elegant finish layered with spice, anise, and licorice. A striking pairing for savory dishes like chicken tagine, foie gras, terrines - or as a contemplative glass on its own.

Champagne Philipponnat
'1522' Grand Cru Extra-Brut 2018
Champagne • France
$229 retail

Created as a tribute to the Philipponnat family’s long history in Champagne, Cuvée 1522 represents the estate at its most refined and terroir-driven. Built around the historic Le Léon vineyard in Ay, this cuvée marries depth, tension, and elegance... a Champagne designed for the table as much as for celebration.
Varietals & Vinification:
A blend of 72% Pinot Noir and 28% Chardonnay. The Pinot Noir comes exclusively from the famed Le Léon vineyard in Ay, while the Chardonnay is sourced from Oger. A portion of the wine is vinified in oak, and most does not undergo malolactic fermentation, preserving freshness, structure, and aromatic lift. The wine spends six years aging on the lees, then receives an Extra-Brut dosage of just 4.25 g/L, highlighting purity and finesse.
Tasting Notes:
Light gold in color. The nose opens with brioche, vanilla, and crème brûlée, followed by subtle menthol and cool mineral notes. The palate is generous and creamy, showing pastry tones and candied citrus, carried by vibrant acidity. The finish is long and distinctive, marked by a fine, spicy note of white pepper (a signature of both the cuvée and Ay terroir). Outstanding with seafood, grilled fish, poultry, and adventurous pairings like caviar or spiced dishes.

Producer Spotlight: Champagne Philipponnat
The History and Style that differentiate Champagne Philipponnat

Rooted in nearly 250 years of history, Champagne Philipponnat stands among the great houses of Champagne, known for structured, expressive wines with a distinctly gastronomic spirit. The estate traces its origins back to 1522, when the Philipponnat family began cultivating vines in the village of Mareuil-sur-Ay... one of the few grand cru sites not located in the Côte des Blancs or Montagne de Reims, giving their wines a unique sense of place.
Philipponnat has been family-owned for generations, with an enduring commitment to quality, traditional methods, and terroir expression. Their philosophy balances richness and precision: careful vineyard selection, thoughtful use of oak, extended lees aging, and meticulous blending. A signature of the house is the “perpetual reserve” system (a solera-like blending of reserve wines going back decades), which adds complexity and consistency from year to year.
Unlike many Champagne houses that lean toward overt fruit or overt sweetness, Philipponnat’s style is defined by structure, depth, and savory detail - qualities that make their wines especially compelling with food. Whether it’s the balanced richness of the Réserve Perpétuelle, the purity of the Non-Dosé, the elegant fruit of the Rosé, or the concentrated intensity of the Blanc de Noirs, each cuvée reflects a house philosophy that prizes clarity, nuance, and longevity.
