Here is something worth knowing about white Burgundy: the most famous bottles in the world (the Meursaults, the Pulignys, the Montrachets) are made from the exact same grape as a $15 grocery store Chardonnay. Same variety. Same country. Often the same vintage year. What separates them is where the vines are planted, how old they are, and who is tending them.


That gap, between what Chardonnay can be and what most people assume it is, is the focus of this week's flight.


We are pouring three white Burgundies from three distinct corners of the region: a Chablis from one of the appellation's most prestigious families, a Viré-Clessé from old vines approaching a century in age, and a Pernand-Vergelesses from a domaine that also makes Corton-Charlemagne Grand Cru.


These are wines typically experienced one bottle at a time, often at much higher commitment. This week's $34 White Burgundy tasting flight includes three pours:

Marcel Servin is the personal label of François Servin, whose family has been making wine in Chablis since 1652. These wines are bottled only in exceptional vintages and offered through a small number of trusted importers.



One of our all-time favorites, this wine clearly demonstrates what Chablis actually is... not just as an appellation, but what Chardonnay can be when the winemaker lets the terroir shape the wine.


Varietal: 100% Chardonnay


Vinification

Fermented in stainless steel with fine lees settling, preserving purity with no oak influence and nothing standing between the fruit and the chalk. The Kimmeridgian limestone soils that define Chablis leave a saline, almost oyster-shell quality in the wine that no other appellation can replicate.


Tasting Notes

Green apple and Fuji apple on the nose, with ripe pear and bright white florals. The palate is lean and focused, with crisp acidity and a streak of chalky minerality that carries from mid-palate through the finish. Clean and precise, with more presence than an AOC regional wine usually has.


The word for this wine is sharp, in the best possible sense: it's precise, yet layered, and an incredible representation of Chablis for the price point.

Founded in 1956, André Bonhomme helped define the Viré-Clessé as an appellation. Today, the estate's old vines up to 95 years old produce a wine with uncommon depth for the region.


Typically only available in small allocations that are shared via private offers, we are excited to pour this renown wine in our flight.


Varietal: 100% Chardonnay


Vinification

Spontaneous fermentation in stainless steel preserves full aromatic expression while keeping the wine fresh. The age of the vines (some approaching 100 years) concentrates the fruit naturally, producing a density and texture that you don't find in younger-vine Mâconnais.


Tasting Notes

White peach, apple, honeycomb, and wild fennel on the nose, with the glass opening to almond blossom and a faint golden honey quality. The palate is creamy and round, with salted pear and a touch of crème brûlée, cut through by fresh acidity on the back end. Mineral throughout, with a finish that lingers longer than you expect.


This wine might surprise you. The Mâconnais carries a bias of being warmer, rounder, and more crowd-pleasing, but the Bonhomme old vines deliver something more serious than that reputation. Rich enough to be approachable, structured enough to be interesting.

Pernand-Vergelesses 'Les Combottes' Blanc 2023

Pernand-Vergelesses, Burgundy France

Domaine Rapet has farmed the Corton hillside since the 18th century, with holdings in Corton-Charlemagne Grand Cru. The 'Les Combottes' vineyard sits just below those sites, directly in the shadow of the Corton-Charlemagne hill.


Varietal: 100% Chardonnay


Vinification

Hand-harvested, whole-cluster pressed, then fermented in stainless steel before moving to French oak barrels (30% new) for 12 to 15 months with lees stirring. The oak is present but measured, enough to give structure and a subtle spice note without overpowering the wine. This is Côte de Beaune winemaking at a villages price.


Tasting Notes

Fresh fruit and white spice on the nose, with hints of honey and a mineral flint quality that emerges as the wine opens. The palate is lively and precise: lemon confit, orchard fruit, a faint cream texture from the oak, with the limestone of the site showing as a chalky tension through the finish.


Les Combottes is as close to Grand Cru as you can get for the price point, made with the same elegance and finesse as their Corton-Charlemagne.

Why Wine Lovers Are So Passionate About Burgundy

White Burgundy shows how dramatically place can shape a single grape. The three wines in this flight are all Chardonnay, from the same country and vintage, yet they taste completely different.


That range is what makes Burgundy worth understanding.

Burgundy vs California

Limestone, Cold Air, and the Purest Expression of Chardonnay


Burgundy Chardonnay is shaped by a cooler climate, producing higher acidity, lower alcohol, and more restrained fruit. Oak is used for structure, not flavor. California Chardonnay often comes from warmer conditions, leading to riper fruit, higher alcohol, and more pronounced oak or malolactic influence.


Neither is better, but they are built with different intentions. Understanding this distinction changes how you taste both.


What to Look For in the Glass

  • Chablis → lean, high-acid, citrus, saline minerality
  • Viré-Clessé → rounder, orchard fruit, textured, balanced
  • Pernand-Vergelesses → structured, layered, mineral with subtle oak
