In the restaurant industry, it's easy to highlight our big successes, awards and fundraisers, but we want to take a moment to showcase an important piece of who we are. We are excited to share this with you, and for you to get to know us a little bit better!

Judith Schad of Capriole Goat Cheese

Judith Schad, founder of Capriole Goat Cheese, has been making goat cheese for over 35 years. The business started a little bit by accident with an excess of milk from the goats she had lovingly started raising in Indiana in the 80's and grew to be hugely successful.


The relationship between Prairie Grass Cafe and Judith Schad started when Chef Sarah started purchasing Judith’s cheese for The Dining Room at The Ritz Carlton (a Four Seasons Hotel). The relationship grew through Green City Market, where Chef Sarah is a founding member. Judith was one of the original vendors at Green City when it started in 1999. When Chefs George and Sarah opened Prairie Grass Cafe in 2004, they knew that they wanted to continue working with high quality products like Capriole’s goat cheese.

Capriole Goat Cheese at Prairie Grass

We use Capriole cheeses in our Marinated Beet Salad, which has been on our menu for almost 20 years! We have included a recipe that uses Judith's cheese and our classic marinated beets for you to try out at home. It’s not exactly what we make here at the restaurant but a fun variation!
